Hinojo gratinado con champiñones / Fennel and mushroom gratin



Posiblemente muchos de vosotros hayáis comido o visto pocas veces hinojo fresco. Por alguna extraña razón no es un plato muy habitual en nuestra gastronomía, aunque si que se utiliza como condimento gracias al maravilloso aroma anisado que tiene. Del hinojo se usa todo, las hojas, las semillas y el bulbo, que es lo que vamos a cocinar en esta ocasión. Es más habitual encontarlo en el mercado en otoño, pero aun se encuentra con relativa facilidad, así que si lo encontraís en el mercado os recomiendo probarlo.

INGREDIENTES (Para 2 o 3)
  • 1 bulbo de hinojo
  • 4 champiñones
  • 1 cucharada de mantequilla
  • 1 cucharada de harina
  • 1 1/2 vaso de leche
  • Sal
  • Pimienta
  • Agua
  • Queso emmental rallado
Lavad el bulbo y cortadle la parte más dura de la base. Partidlo en cuartos y troceadlo en juliana. Colocadlo en un recipiente que pueda ir al microondas y al horno, rociadlo con una cucharada de agua, salpimentad y metedlo al microondas durante 4 minutos (dejadlo más tiempo si no os gusta muy crujiente). Si no teneis microondas podeis cocinar el hinojo al vapor hasta que se reblandezca un poco.
Mientras se va cocinando el hinojo lavad y filetead los champiñones en láminas de unos 5mm de grosor. Cuando el hinojo esté listo colocad los champiñones sobre él y comenzad a hacer la bechamel.
Para ello, en una sartén se pone la cucharada de mantequilla y se espera a que esté fundida. Agregad la harina, removed para que se tueste ligeramente y se mezcle bien con la mantequilla y empezad a añadir la leche poco a poco, sin dejar de remover para que se vaya ligando bien con la harina sin que se creen grumos. Dejad que cueza un poco, siempre sin dejar de remover, añadidle una pizca de sal y volcadla sobre el hinojo y el champiñón.
Precalentad el horno a 200º. Espolvoread con queso rallado y hornead hasta que el queso esté tostado.

I'm almost sure that many of you have never tried or rarely eat fresh fennel. For some strange reason it's not a very common dish in our gastronomy though, thanks to it's wonderful mild anise flavour, it's sometimes used as a condiment. We can use about everything from fennel, leaves, seeds and bulb, that's what we are going to cook in this occasion.  It's easier to find in autum markets but you still can find it in some places, so if you manage to see one I recommend you to try it.

INGREDIENTS (Serves 2 or 3)
  • 1 fennel
  • 4 mushrooms
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 1 1/2 glass of milk
  • Salt
  • Pepper
  • Water
  • Grated emmental cheese 
Rinse the bulb and cut off the hardest part of the bottom. Cut it in quaters and slice it. Place it in a container you cand put into the microwave and the oven, sprinkle some salt and pepper, a tablespoon of water, and cook it in the microwave for 4 minutes (if you perfer it softer cook it for more time). If you don't have microwave you can steam cook it until it's soft..
While the fennel is cooking, clean and slice the mushrooms (5mm thick). Once the fennel is ready, set the mushrooms on top and start to make the bechamel. For it you will need to place the butter in a pan and wait until it melts. The add the flour, stir so it blends with the butter, and let it cook a couple of seconds. Add milk, a little bit at a time so that it makes no lumps, stiring continuously. Let it boil, you will also have to stir so it doesn't stick to the pan, add some salt and pour it over the mushrooms and fennel.
Preheat the oven to 200º, sprinkle some cheese and bake until the cheese is golden.
