Sopa de tomate y boniato/ Tomato and sweet potato soup

Por fin ha llegado el frio de verdad, que ya iba siendo hora. Ahora lo que más apetece son sopitas y pures o cremas calientes que nos ayuden a entrar en calor. Hay quien prefiere los unos más que los otros. A mi me gustan más los segundos, así que la receta esta va batida, pero si sois fans de los primeros, trocead las cosas más pequeñas y añadid más caldo, que el juego de texturas es más interesante.



INGREDIENTES: (Para 2)
  • 4 tomates grandecitos 
  • 1/2 cebolla 
  • 1/2 boniato grande o uno pequeño 
  • Sal 
  • 1/2 vaso de caldo de pollo (o caldo de verduras si eres vegetariano) 
  • Pimienta negra (al gusto) 
  • Aceite de oliva 
  • Croutons o picatostes (opcional) 
Picar la cebolla en juliana, pelad el boniato y partidlo en dados y pelad y trocead los tomates. En una cazuela verted unas tres cucharadas de aceite y añadid la cebolla y el boniato y salad. Pochad hasta que la cebolla esté dorada y añadid el tomate. Agregad el caldo y dejad hervir durante unos minutos. Triturad con la batidora, añadid pimienta y servidla calentita con unos picatostes. ¡Disfrutad!

Cold is back, and it was about time. Now, most of us, are craving for soups, purées or creams that help us to warm up. People usually prefer one more than the other. In my case, I'm a more into purées and creams. That's why this is blended, but if you fancy soups you can always chop things a bit smaller and add more broth. The texture mix will be quite interesting.

INGREDIENTS (Serves 2)
  • 4 big tomatoes 
  • 1/2 sweet potato or 1 if it's small 
  • 1/2 onion 
  • Salt 
  • 1/2 cup of chicken broth (of vegetable broth in case you are vegetarian) 
  • Olive oil Black pepper (to taste) 
  • Croutons or fried bread (optional) 
Slice the onion, peel and dice the sweet potatoes and peel and chop the tomatoes. In a large pan pour three tablespoons of olive oil and add the onion and sweet potato and some salt. Cook until the onion is golden and add the tomato. Pour in the broth and let it boil for a couple of minutes. Blend with a hand blender, crush some black pepper and serve hot with croutons. Enjoy!
