Tarta de cebolla / Onion cake


De vez en cuando vas a algún restaurante y pides algo que probaste hace mucho tiempo en otro lugar y recuerdas lo buenisísimo que estaba y piensas que eso mismo lo podrías hacer tu en casa. Esta es una de esas ocasiones. La tarta en sí la tomé en Bélgica la primera vez y en Francia la segunda, pero me siguió pareciendo una gran idea en donde queso y cebolla resaltaban uno el sabor del otro. 
La masa, se puede comprar, si estáis especialmente vagos, pero que sea tipo brisa (masa quebrada).

INGREDIENTES:

Masa:
  • 225g harina
  • 9 cucharadas de mantequilla fundida
  • 12 cucharadas de agua
  • 1 cucharadita de sal
  • 1 cucharadita de levadura en polvo

Relleno:
  • 3 cebollas grandes
  • 2 cucharadas de aceite
  • 1 cucharada de mantequilla
  • 4 huevos
  • 500 ml nata liquida
  • 250g queso emmental rallado
  • Sal
  • Pimienta negra

Pelad las cebollas y partidlas en juliana. En una sarten grande colocad el aceite y la mantequilla y calentad a fuego medio. Añadid las cebollas con un poquito de sal y tapad. Id removiendo para que todo se dore y poche bien.
Mientra tanto mezclad en un cuenco todos los ingredientes de la masa y amasad hasta que esté suave y no se pegue. Añadid un poco mas de harina o agua si necesario. Dejad reposad mientras la cebolla se pocha. Estirad la masa y colocadla en un molde de horno que tenga unos 4 dedos de altura. Pincha la base, con un tenedor, para que no se hinche. Precalentad el horno a 180º y una vez caliente meted el molde con la masa en la parte media-baja del horno. Dejad que se hornee durante unos 10 minutos o hasta que empiece a estar seca y doradita. Mientras tanto mezclad los huevos, la nata, el queso (guardad un poquito), la cebolla y la pimienta. Cuando tenga un ligero color la masa, sacadla del horno, colocad la mezcla sobre la masa y cubrid con un poco de queso. Meted al horno durante 35-40 minutos. Pinchadla con un cuchillo para aseguraros que esté bien hecha antes de sacarla del horno. Dejad que se enfrie un poco antes de comer.

You sometimes try something in a restaurant and you remember that you had already tried something similar in another place, you remember that it was delicious and think you can make something similar at home. this is one of those occasions. The first time was in Belgium and the second time in France, but no matter where, The mixture of cheese and onion seemed to be a great idea to mix into a quiche.
You can always buy the dough if you're feeling lazy, but in that case buy something similar to shortcrust pastry.

INGREDIENTS:

Crust:
  • 225g flour
  • 9 tablespoons of melted butter
  • 12 tablespoons of water
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder

Filling:
  • 3 big onions
  • 2 tablespoons of oil
  • 1 tablespoon of butter
  • 4 eggs
  • 500 ml cream
  • 250 g grated emmental cheese
  • Salt
  • Black pepper
Peal the onions and finely slice them. In a big pan ad the oil and butter and heat to medium heat. Add the onions with a pinch of salt and cover with a lid. Stir once in a while so all the onion is golden and soft.
Meanwhile, in a bowl mix all the ingredients for the crust and knead until it's soft and doesn't stick to your hands. You may need to add some extra flour or water depending on the flour you use. Let it settle while the onion cooks. Roll out the dough and place it in a tin that's 4 inches high. With a fork prick all the base of the dough to avoid it from inflating. 
Preheat the oven to 180º and once hot, place the dough in the oven in the medium-lower part. Let it for around 10 minutes or until slightly golden and dry. While it cooks mix in a bowl the eggs, cream, cheese (leave a couple of tablespoons for topping the cake), the onion and pepper. when the crust is half cooked, take it out of the oven, pour the mix into it, cover with the remaining cheese and bake for 35-40 minutes. Test with a knife after that time to check if it's well done before take it out of the oven. Let it cool down a bit  before serving.

Quiche de queso azul, calabacín y tomates secos/ Zucchini, blue cheese and sundried tomatos quiche

¿Nunca os ha pasado que os apetece mucho comer/cocinar algo y no teneís con qué hacerlo? El otro día me pasó a mi con la quiche y, tras varias búsquedas de masa alternativa de quiche sin mantequilla, opté por utilizar la de la empanada que publiqué hace tiempo. Los ingredientes eran muy similares a otras que vi por la red y sabía fehacientemente que esta salía buena.
En este caso es una receta en la cual el calabacín aporta una jugosidad a la quiche y el queso azul y los tomates secos el sabor. Se puede combinar con lo que más os guste, esto es como todo, así que podéis poner y quitar ingredientes a vuestro gusto. Eso si, si lleva verduras tipo calabacín, berenjena, puerro, champiñón, es interesante que las cocinéis antes de meterlas (bien para que suelten el exceso de agua o bien para que se cocinen).


INGREDIENTES
  • Masa de empanada
  • 3 huevos
  • 200ml de nata
  • 1 calabacín grande
  • 50g queso azul
  • 50g queso rallado
  • 5 tomates secos
  • Sal
  • Pimienta
  • Aceite de oliva 
Calentad agua y meted los tomates secos.
Lavad el calabacín y trocearlo. En una sartén, agregad un poco de aceite, el calabacín, sal y sofreidlo hasta que esté doradito. Retirad y dejad que se enfrie.
Precalentad el horno arriba y abajo a 180º, colocando la rejilla en la parte media-inferior del mismo.
En una fuente para el horno extended la masa de la empanada, pinchadla y metedla a que se empiece a cocinar (esto evitará que se quede cruda en la parte inferior).
Picad los tomates secos en trocitos. En un cuenco, batid los huevos y agregad la nata, pimienta al gusto, el queso rallado y los tomates.
Cuando la masa empiece a estar un poco hecha (se ve que está más seca y  habrán pasado entre 5 y 7 min), sacadla del horno. Esparcid el queso azul desmigado y el calabacín y cubrid con la mezcla del cuenco.
Volved a introducir en el horno hasta que la superfiecie esté bastante dorada. (si teneis dudas de si está hecha o no pinchadla con un cuchillo para comprobar que no sale manchado).
Sacad del horno y disfrutadla.

It has never happen to you that you really want to eat/cook something but you don't have the ingredients? Something similar happened to me the other day with this quiche, and after several searched I ended up make the crust with the "empanada" recipe dough I posted long time ago. Ingredients were very similar to others I had seen through the web, but instead of butter, with olive oil, and I certainly knew this dough was good.
In this particular case, zucchini added juiciness to the quiche and blue cheese and sun dried tomatoes flavour.You can combine it with whatever you like most, as everything, so you can add or eliminate ingredients. Just one thing, if you are adding vegetables like zucchini, aubergine, leek, mushrooms... you will have to cook them before adding them to the quiche (just to avoid them from pouring their water into the batter or to cook them).

INGREDIENTS
  • Empanada dough
  • 3 eggs
  • 200ml cream
  • 1 big zucchini
  • 50g blue cheese
  • 50g grated cheese
  • 5 sun-dried tomatoes
  • Salt
  • Pepper
  • Olive oil
Heat some water and drop in the sun-dried tomatoes.
Wash the zucchini and cut it in small pieces. In a pan, pour some olive oil, the zucchini and salt and stir-fry until golden. Take the pan out of the fire and let it cool.
Preheat the oven top and bottom, to 180º, placing the rack in the middle-lower position.
In a deep oven tray place the dough, use a fork to make some holes and place it in the oven so it starts cooking (this will avoid the dough from being under cooked).
Chop the tomatoes. In a bowl, whisk the eggs and add cream, pepper to taste, grated cheese and tomatoes.
Once the dough starts getting cooked (you'll see it's drier and 5 to7 minutes would have passed), take it out of the oven. Crumble the blue cheese over it, add the zucchini and cover with the bowl's content. Put in the oven again until the top part is quite golden (if you have any doubts use a knife to see if it comes out clean or not).
Take it out of the oven and enjoy!.

Masa de empanada / Empanada dough

Y pensaréis, ¿para qué quiero yo saber cómo se hace la masa de la empanada si se puede comprar hecha y lo rico es el relleno? Pues porque los rellenos suelen ser más o menos decentes pero la masa puede marcar la diferencia. Así, entre otras cosas, cada uno puede rellenar su propia empanada de lo que más rabia le dé. A cada uno le gusta la empanada de una cosa y los ingredientes siempre son variables, así que de esta forma podéis rellenarla de lo que más os apetezca y aprovechar que ya le queda poco a la temporada de horno (al menos en este lado del mundo).

INGREDIENTES (para una empanada de 20 x 30cm)

  • 225g harina de trigo
  • 8 cucharadas aceite de oliva
  • 14 cucharadas agua
  • 1 cucharadita sal
  • 1 cucharadita levadura

En un cuenco colocad la harina, levadura y sal y haced un montoncito con ello, dejando un agujero en el centro. Añadid los líquidos en el interior y empezad a mezclarlo. Cuando esté todo bien integrado amasad con fuerza para que quede una masa elástica que no se tiene que pegar a las manos. Haced una bola con ella y dejadla reposar una media hora.
Precalentad el horno a 180º.
Espolvoread un poco de harina sobre la encimera y estirad hasta que esté bastante finita. Colocadla sobre la bandeja que vayais a usar para meterla al horno y rellenadla de lo que más os apetezca. Os recomiendo algún relleno jugosito. Cerradla bien.
Hornead a 180º, en la mitad del horno, durante unos 25min. (dependerá de lo gorda que hagáis la masa). Cuando veáis que está tostada sacad del horno y estará lista para comer, caliente o fría.

Because fillings are almost always ok, but the dough can make a whole difference. This way, you can fill it with what you prefer. Everyone prefers a different filling and ingredients are changable, so this way you can make your perfect "empanada" and use the last days of oven before summer (at leat on this side of the world).

INGREDIENTS (For a 20 x 30cm empanada)
  • 225g wheat flour
  • 8 tablespoons of olive oil
  • 14 tablespoons of water
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder

In a big bowl place the flour, salt, baking powder and make a volcano with it. Add the liquid in he centre and mix everything. Once well mixed knead it until you obtain an elastic dough that doesn't stick to your hands. Make a ball with it and let it settle for half an hour.
Preheat the oven to 180º.
Sprinkle some flour over the counter top and roll it out until thin. Place it over an oven tray and fill it of what you prefer. I recommend you a juicy but not liquid filling. Close it well.
Bake it to 180º, in the middel of the oven, for around 25min. (that will depend on how thick you roll out the dough). Once you see it's golden brown take it out of the oven and enjoy it, hot or cold.
