A quien me siga en Instragram ya vería hace tiempo que tenemos un mini huerto en el balcón. He de decir que no soy yo quien más se ocupa de él, pero si quien seguramente le acabe sacando más partido :). Ver como van creciendo las cosas me encanta y mientras las veo crecer voy pensando en qué hacer con ellas. Hemos plantado pimientos, pero aun no han salido, ni se están asomando, así que el rojo que lleva la ensalada no es del balcón, así como el pepino, que están aun creciendo (por eso uso algunas flores)
INGREDIENTES (Para 2)
- 2 cucharadas de pimiento rojo picado
- 10 tomates cherry
- 4 tomates secos en aceite
- 4 flores de calabacín
- Pepino partido en bastoncitos (aprox. 10cm de pepino)
- Flores de pepino (al gusto y podéis cambiarlas por otras flores comestibles).
- 1 cucharadita de anchoas picadas
- 3 cucharadas de queso feta en trocitos
- Sal
- Aceite de oliva
- Vinagre de Jerez
En un botecito mezclad 3 partes de aceite por una de vinagre y las anchoas. Agitad bien todo y añadid sal en función a lo que se necesite.
Lavad los tomates y partidlos en trocitos pequeños (en 8 trocitos). Colocadlos en una ensaladera y agregad el pepino, los tomates secos partiditos en trocitos pequeños y el pimiento rojo. Lavad las flores, secadlas bien y partid en trocitos las de calabacín. Añadid el queso y aliñad con la vinagreta. Decorad con alguna flor de pepino.

My Instagram followers have already seen that we are growing a small orchard in my balcony. I must say that I'm not really in charge of it, but will certainly be who obtains a benefit of the produces :). I love seeing them how they grow, and in this case, as they grow, I enjoy thinking about recipes with them. We have peppers, that still haven't grown, so the red peppers in the recipe are not from my "orchard", and the same happens with the cucumber, that's still growing (that's why I use some of the flowers).

- 2 tablespoons of chopped red bell pepper
- 10 cherry tomatoes
- 4 sundried tomatoes
- 4 zucchini flowers
- Cucumber chopped in sticks (aprox. 10cm)
- Cucumber flowers (as many as you wish and you can change them for other eatable flowers).
- 1 teaspoon of chopped anchovies
- 3 tablespoons of feta cheese en small pieces
- Salt
- Olive oil
- Wine vinegar
In a small jar mix 3 parts of olive oil for one of vinegar and the anchovies. Mix well and add salt if needed.
Rinse the tomatoes and cut them in small pieces (in 8). Place them in a salad bowl, add the cucumber, the dried tomatoes in small pieces and the red pepper. Rinse the flowers, dry them and chop the zucchini ones, and add them to the salad. Add the cheese and dress with the vinaigrette. Decorate with cucumber flowers.
