Disfrutadlo :)

I know I've almost disappeared in summer but, as summer and ice cream go together I've decided that it's a good recipe to share with you now. The other day I arrived home and I realized I had no ice cream in my freezer. I thought about it and decided to take a challenge I've been looking forward for quite some time, home made ice cream without an ice cream machine. My first attempt was a peach ice cream hat had a very nice flavor but was to heavy, as the recipe I followed had no milk in it. I rather recommend you to use a recipe with milk in it, it makes it much lighter. The lack of fruit in my fridge took me to try making one of my favorite ice cream flavors, caramel. Most of the recipes contained egg, so I had to improvise and make a mix of different recipes. I enjoy so much how it turned out that I post you the recipe here so you can try and make it.

INGREDIENTS:
- 200ml heavy cream
- 100ml semi skimmed milk
- 125ml sugar
Heat the milk and dissolve in it a quarter of the sugar. Put the rest of the sugar in a sauce pan and heat it to medium fire. Once you see it starts caramelizing slightly stir it so it all caramelizes without burning. You must be very careful because it goes from light to too dark in just a second. Once you have a golden color, take it out of the fire and add half of the heavy cream. Stir it well until it's all mixed and after it's all well incorporated add the milk, stir and set aside until it cools.
Whisk the other half of the and incorporate the cool caramel mix with a whisk.
Introduce the mix in the freezer and every 20-30 minutes take it out and whisk it well to avoid ice crystals from forming. Once it's all completely cold cover it and keep it in the freezer until you eat it. Enjoy! :)
