El verano me tiene desaparecida pero, como verano y helado van de la mano se me ha ocurrido que esta era una buena receta para compartir. El otro día llegué a casa con mono de helado y me di cuenta que no tenía en el congelador. Me planteé entonces hacer algo que llevaba unos años persiguiendo, hacer helado en casa sin tener una heladera. El primer intento fue con un helado de melocotón, quedó muy bueno de sabor pero demasiado grasiento porque no le puse nada de leche. Era lo que recomendaba la receta que seguí, pero sinceramente no os lo recomiendo, os recomiendo que mezcleis nata y leche. La falta de fruta, y las ganas de probar a hacer otros sabores me llevó a hacer helado de caramelo, uno de mis preferidos. La mayoría de las recetas que encontré llevaban huevo, así que tuve que improvisar un poco y hacer una mezcla de varias para obtener lo que quería. Viendo lo bueno que quedó os dejo aquí la receta.
INGREDIENTES:
- 200ml de nata para montar
- 100ml de leche semidesnatada
- 125ml de azúcar
Calentad la leche y disolved en ella la un cuarto del azúcar. Por otra parte, en un cazo poned la parte del azúcar y colocadla al fuego. Cuando veais que empieza a caramelizarse movedla un poco para que no se queme el caramelo y esperad hasta que esté toda disuelta. Hay que tener cuidado porque pasará de estar de color claro a oscuro en muy poco tiempo y se puede quemar con facilidad. Cuando tenga un color dorado añadid con cuidado y poco a poco la mitad de la nata y removed hasta que esté bien disuelta con el caramelo. Agregad la leche azucarada, removed bien, retirad del fuego y dejad enfriar.
Montad la otra parte de la nata y cuando esté todo frio mezclado con el contenido del cazo, batid con unas varillas para integrarlo.
Meted la mezcla al congelador y cada 20-30 minutos sacadla y removedla bien con las varillas para que no se formen cristales de hielo. Cuando esté completamente frío tapad y reservad en el congelador para cuando queráis comerlo. Disfrutadlo :)

- 200ml heavy cream
- 100ml semi skimmed milk
- 125ml sugar
Heat the milk and dissolve in it a quarter of the sugar. Put the rest of the sugar in a sauce pan and heat it to medium fire. Once you see it starts caramelizing slightly stir it so it all caramelizes without burning. You must be very careful because it goes from light to too dark in just a second. Once you have a golden color, take it out of the fire and add half of the heavy cream. Stir it well until it's all mixed and after it's all well incorporated add the milk, stir and set aside until it cools.
Whisk the other half of the and incorporate the cool caramel mix with a whisk.
Introduce the mix in the freezer and every 20-30 minutes take it out and whisk it well to avoid ice crystals from forming. Once it's all completely cold cover it and keep it in the freezer until you eat it. Enjoy! :)
