Albondigas con salsa de piña/ Pineapple sauce meatballs

Ya os he contado alguna vez que no se que extraña relación hay entre la Navidad y la piña, el caso es que existe. Aprovechando esto, y que tenia otra cena navideña, en la que no podía utilizar lactosa, me pareció una buena opción para un segundo plato navideño para bastante gente  unas albondiguitas con salsa de piña, para dar el toque navideño, y sin tener que usar el horno.

INGREDIENTES (Para 4)
  • 500g carne picada de cerdo y ternera
  • 1 cebolla grande
  • 1 diente y medio de ajo
  • 1 cucharada de pimentón dulce
  • 1 cucharada de pan rallado
  • 2 cucharadas de leche o agua
  • 250g de piña natural (si es de lata, guardad el caldo en la que viene)
  • Sal
  • Pimienta
  • Aceite de oliva
  • Harina

Partid media cebolla, picadla en trocitos pequeños  y freídla en una sartén grande, donde vayáis a freír después las albondigas. Cuando esté doradita sacadla de la sartén y dejad que se temple. Mezclad la cebolla con la carne, el pan rallado, la leche (o agua) y el ajo picado, añadid sal al gusto, pimienta y el pimentón. Dadle forma a las albóndigas y enharinadlas.
En la sartén, agregad un dedo de aceite, calentadlo y freídlas a fuego fuerte para que se dore el exterior. Según se vayan haciendo sacadlas a un plato. Quitadle algo de aceite a la sartén y agregad la otra media cebolla partida en trozos grandes. Freídla a fuego medio hasta que esté dorada. Mientras se fríe, partid la piña en trozos y añadidlos a la sartén. Cocinadlos durante 3 o 4 minutos y batidlo todo con la
batidora. Mezclad las albóndigas con la salsa y dejad que todo cueza junto durante 10 min. Si usáis piña de lata, agregad el caldo mientras cuece para aligerar la salsa. Si no, echadle un poco de agua.

I've already told you about the strange relationship between Christmas and pineapple, I don't know where it comes from, but the thing is that it exists. As I had a Christmas dinner with some friends, and taking into consideration that one of them is lactose intolerant, I thought it would be a christmassy dish, and without using oven.

INGREDIENTS (For 4)
  • 500g mixed ground pork and beef meat.
  • 1 big onion
  • 1 1/2 garlic cloves
  • 1 tablespoon sweet paprika
  • 1 tablespoon bread crumbs
  • 2 tablespoons milk (or water)
  • 250g pineapple (if it's canned, keep the liquid it comes in)
  • Salt
  • Pepper
  • Olive
  • Flour

Chop the onion into small pieces and fry half in a big pan, the same one as you will afterwards fry the meatballs in. Once it's golden take it out and let it cool a bit. In a big bowl mix the meat with the milk (or water), breadcrumbs, salt, pepper, paprika and garlic. Take pieces of the meat, shape it into meatballs and roll them in flour. 
In the pan you've used before add about 2 cm of oil, heat it well and fry the meatballs to high heat until they get golden on the outside. Once cooked, take them out of the pan. Take some oil out of the pan and fry the other half of the onion. Cook it to medium heat. While it cooks, cut the pineapple into pieces and, once the onion it's cooked add it to the pan. Stir-fry for 3 or 4 minutes and blend it all with an electric mixer.
Mix the meatballs with the sauce and let it all boil together for 10 minutes. If you are using canned pineapple, add the liquid while the sauce is boiling to make it lighter. If not, use some water.
