Pollo asado especiado / Roasted seasoned chicken

¡Adoro el horno! Si la luz fuese gratis, creo que lo tendría puesto todo el día haciendo mil y una cosas... en invierno, claro. Hacer pollo asado es una de esas cosas que, además, es muy agradecida. En mi casa siempre se ha opinado que el pollo no tiene mucho sabor, por lo que por lo general se adoba o acompaña de alguna salsa con intención de "animarlo". Si, además, el pollo está marinando un día o más, se consigue que este absorba bien los aromas y se impregne de ellos bien. Esta receta es perfecta si tenéis invitados o simplemente buscáis alejaros del típico pollo asado con cerveza, vino o limón. Modificad las especias como queraís... la dejo en vuestras manos para que la modifiqueís y disfrutéis.


INGREDIENTES: (Para 4)
  • 4 cuartos traseros de pollo
  • 2 cucharadas de pimentón dulce
  • 1 cucharadita de comino molido
  • 1/2 cucharadita de tomillo
  • 1/2 cucharadita de piel de naranja picada
  • 1/2 cucharadita de piel de limón picada
  • 1/2 diente de ajo picado
  • 1/2 cucharadita de  jengibre en polvo
  • 1/2 cucharadita de pimienta negra
  • Agua de hidratar tomates secos
  • Sal

Mezclad los ingredientes secos en un recipiente amplio, mezcladlos bien y rebozad el pollo en ellos. Dejadlos reposar durante 24 horas.
Precalentad el horno a 180º por arriba y por abajo.
Colocad los cuartos de pollo con la piel para abajo en una bandeja de horno y regadlo con el agua de hidratar los tomates secos, que os dije que guardaseis hace un par de recetas. Debe haber como un dedo de agua de los tomates, así que si os faltase un poco agregad agua normal. Cuando el horno esté caliente, colocad la bandeja en la parte central del horno y horneadlo. Aproximadamente 25 minutos por cada lado. A mitad, dadle la vuelta al pollo y esperad a que la piel se tueste.
Cuando esté tostadito servid acompañado de lo que más os guste y listo para disfrutar.
En la foto os propongo unas cebollitas asadas y arroz.

I love the oven! If the light was free I think I'd have it on all day long, cooking a thousand things... in winter, of course. Roasting chicken is one of those things that are really easy and turn out great. At my house chicken has always been thought of a bland meat, so it's usually cooked with some sauce or marinated before cooking it. If the chicken stays for at least a day in this marinade, you get it to absorve all the flavours and imbibe the meat. It's a perfect recipe if you have guests or you simply are willing to leave aside the classic beer, wine or lemon roasted chicken. You are free to modify the spices to your will... I leave it in your hands.

INGREDIENTS: (For 4)
  • 4 chicken thighs
  • 2 tablespoons of sweet paprika
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of grated orange zest
  • 1/2 teaspoon of grated lemon zest
  • 1/2 chopped garlic clove
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground black pepper
  • Water from rehydrating the sundried tomatos
  • Salt
Mix the dry ingredients in a big bowl to make a dry rub. Rub the chicken thighs with it and let them settle for 24h.
Preheat the oven to 180º, top and bottom.
Place the chicken thighs with the skin facing down on a greased oven tray and pour over it the tomato water that I asked you to save a couple of recipes ago. You have to have a centimeter of water so, if you don't have enough of tomato water add regular tap water.
Once the oven is hot, place it in the middle rack of the oven and roast it. 25 minutes on each side. Half way down turn the chicken over and wait for the skin to roast.
Once ready, serve sided by whatever you prefer and enjoy :)

Nueces y cacahuetes garrapiñados/ Caramel coated walnuts and peanuts

Este año la felicitación navideña era precisamente una foto de una de las múltiples tandas de garrapiñadas que he hecho este año. Por costumbre, estamos habituados a tomar almendras garrapiñadas, que quizás sean las más comunes de encontrar, pero poco a poco van comercializándose otros frutos secos garrapiñados. 
La receta, heredada de la madre de mi abuelo (que lo hacía con almendras) la llevé por primera vez a práctica con mi abuela. Curiosamente, con la buena mano que tiene para cocinar, las garrapiñadas no son lo suyo. Acaba la mayoría de las veces obteniendo un guirlache que, aunque bastante rico, pierde totalmente la textura de garrapiñado y es que, si algo tiene esta receta, es que hay que tener mucho cuidado en no perder de vista la sartén ni un segundo.
Las nueces quedan buenísimas si, después de garrapiñarlas y que estén frias, las mojáis en chocolate y, los cacahuetes, recuerdan mucho en sabor a los que venden con miel.



INGREDIENTES
  • 2 tazas de nueces y/o cacahuetes
  • 1 taza de azúcar
  • 2/3 taza de agua
En una sartén (el tamaño dependerá de la cantidad de nueces o cacahuetes que hagáis, tienen que quedar bien esparcidos, sin amontonarse) pon el agua y el azúcar a calentar a fuego medio. Cuando el azúcar empiece a disolverse agrega los frutos secos y empieza a remover. Ten muchísimo cuidado de que no te salpique el almibar porque es muy fácil que te quemes. Cuando observes que empieza el almibar a hacer  espuma, retira la sartén del fuego, remueve bien todo, espera unos 10 segundos y devuélvela al fuego. Repite la operación cada poco. Al devolver la sartén al fuego, espera unos 5 segundos cuando haya salido la espuma y retirala. Cada vez trendrás que dejar pasar más tiempo la sartén con espuma y fuera del fuego. Cuando el líquido haya casi desaparecido y en el fondo de la sartén haya casi un caramelo (no de color tostado pero si de consistencia), empezará a pegarse cada vez más y cuando se mueva como a pegotes, retirad la sartén del fuego y removed un buen rato sin que esté sometido a calor. En un momento dado se "secará".  Devolved la sartén al fuego, fuerte, en ese momento para que las nueces o los cacahuetes tomen un color un poco tostado. Encuanto estén un poco tostados pasad a un plato para dejar que se enfrien. 
No los toquéis hasta que estén frios, porque 1º, queman, y 2º, hasta que no se enfrian están húmedos en el interior.

This recipe was this year Christmas card ,  a picture of one o the multiple batches of caramel coated walnuts and peanuts. We are usually used to having coated caramel almonds that may be the easiest to find in stores, but gradually other kind of caramel coated nuts start to show.
I made this recipe, inherited from my grandpa's mother (she made it with almonds), for the first time with my grandmother. She is a great cook but caramel coated almonds are not her stuff. We repeated several times the recipe but almost every time she made it she obtained an almond brittle than, although good, has a completely different texture to the one we look for. If something has this recipe is that you can not leave your pan alone for a second or you will lose your final product.
Walnuts are also great if, after caramel coating them and cool, you dip them in chocolate and the peanuts resemble to those that are sold as honey roasted peanuts.

INGREDIENTS
  • 2 cups of walnuts/peanuts
  • 1 cup of sugar
  • 2/3cup of water
In a pan (size will depend on the number of nuts you are using, but they have to be well spread) put the water and sugar to cook to medium heat. Once sugar starts to dissolve add the nuts and start to mix. Be careful with the sugar and water as it is really hot and it's very easy to burn yourself. When it starts to make bubbles take it out of the heat, stir outside the fire, wait around 10 minutes and put the pan back on the fire. Repeat every 10 seconds or so. When you get the pan back to the fire wait about 5 seconds when the bubbles appear (don't stop stiring) and take it out again. As time goes by you should let the  pan more time with bubbles and out of the fire. Once the liquid has almost dissapeared and in the bottom of the pan there's almost a caramel (not in colour but in consistency), it will start to stick and the nuts will move in almost a block, it's the moment to take the pan out of the fire and stir thoroughly for a good time out of any heat source. In a speciffic moment it will "dry". Put the pan back on the fire to high heat and let the nuts get a caramel colour. Take them out of the pan and let them cool in a plate before eating. 
Don't touch them until they are cold because 1º, they are hot, and 2º, until they cool down the interior is a bit humid.

Piña a la plancha con crema ligera/ Pan roasted pineapple with light custard

 Antes de nada...
¡¡¡FELÍZ 2014 A TODOS !!!! :)

Como en estas fechas comemos como si se fuese a acabar el mundo, un postre ligerito (y con piña, que ayuda a digerir) siempre viene bien. Por alguna extraña razón que desconozco en estas fechas se encuentran piñas en todas partes.  Siempre me ha parecido más bien raro, teniendo en cuenta que la piña es de zona cálida y por estos lares no es que haga mucho calor a estas alturas del año... pero bueno, aprovechando que se pueden encontrar piñas en todas partes, os dejo la receta.

INGREDIENTES (Para 2)
  • 250ml leche
  • 1 huevo
  • 1/2 cucharadita de azucar vainillada
  • 3 cucharadas de azúcar
  • 1 cucharada de agua fria
  • 1 cucharadita de maicena
  • 2 rodajas de piña fresca

Calentad la leche con 2 cucharadas de azúcar y el azúcar vainillada y removed hasta que esta se haya disuelto. Retirad del fuego, añadid el huevo batido y poned a fuego bajo. Disolved la maicena en la cucharada de agua y añadid a la mezcla. Cuando empiece a espesar retirad del fuego. Colocad en los cuencos o copas que vayais a utilizar para servir. Dejadla enfriar un par de horas.
Un poco antes de servir, partid la piña, descorazonadla y rebozad las rodajas en un poco de azúcar. En una sartén caliente colocad las rodajas de piña y cocinad hasta que empiece a tostarse el azúcar. Dadle la vuelta y repetid la operación. Cuando esté doradita retiradla, partid en trozos y agregadlos a la crema.
Servid cuando aun esté caliente la piña.

Just before I forget...


¡¡¡HAPPY 2014 TO EVERYONE !!!! :)

As for Christmas holidays we seem to eat as if the world was to end, I post you a light dessert (with pineapple, that helps to digest) that is always a good alternative to sweet Christmas treats.
For some strange reason I am unawere of, you can find loads of pineapples for Christmas, even if it's cold and the opposite climate that they need to grow. I've always thought of it as some strange habit for this time of year... but as we can find them so easily, I leave you the recipe.

INGREDIENTS (For 2)
  • 250ml milk
  • 1 egg
  • 1/2 teaspoon of vanilla sugar
  • 3 tablespoons of sugar
  • 1 tablespoon of cold water
  • 1 teaspoon of corn starch
  • 2 slices of fresh pineapple
Heat the milk with 2 tablespoons of sugar and the vanilla sugar and stir until it disolves. Take out of the fire, add the egg (previously beaten) and place over the fire again (low heat). Disolve the corn starch into the water and add to the saucepan. Once it starts to thicken (it is not supposed to boil), take it out of the heat. Serve in bowls or tall wine glasses. Let it cool for at least a couple of hours.
Before serving, cut out the centre of the pinapple and slightly coat them in sugar. In a hot pan place the pineapple slices and cook until it start to get a golden colour. Turn over and repeat. Once it's golden take it out of the fire, cut it into pieces and add it to the custard.
Serve while the pineapple is still warm.

Untable de tomate / Tomato spread

Se acercan las navidades y todos tenemos en mente que comeremos mucho pero, a veces, nos toca oganizar alguna de esas comidas navideñas y nos quedamos sin ideas. Tendemos a poner varios aperitivos pero, igualmente, tendemos a repetir siempre las mismas cosas, así que para este año os propongo un untable sano y muy sabroso que podeis acompañar de verduras, panecitos tostados...


INGREDIENTES
  • 2 tomates rojos medianos
  • 4 tomates secos confitados (guardad el agua de rehidratarlos que la vais a necesitar para la próxima receta)
  • 1 cucharada de piñones tostados
  • Sal
  • Azúcar
  • Aceite de oliva
  • 1 rebanada de pan duro

En una sartén verted cuatro cucharadas de aceite y cuando esté caliente freid la rebanada de pan duro. Cuando esté bien dorada por ambos lados sacadla de la sartén, retirad la sartén del fuego y  agregad, con  mucho cuidado porque saltará, los 2 tomates rojos pelados y partidos en trozos grandes. Cocinad hasta que el agua de los mismos esté bastante evaporada, agregad un poco de sal y un poquito de azúcar (la cantidad variará en función de lo ácidos que sean los tomates), removed y dejad enfriar. 
En la misma sartén del tomate, una vez retirado este, agregad los piñones y tostadlos.
Agregad el pan, los piñones y los tomates a la picadora y picad durante un tiempo breve (aquí vuelve a variar el tiempo en función de lo buena que sea vuestra picadora), para que queden trozos identificables.
La podéis comer con pan, verduras crudas, agregarla a la pasta o con carne o pescado, pero sea como sea que la toméis, disfrutadla! :)

Christmas is coming and we all have in mind we'll be eating tons of food but, sometimes, we have to organize one of those meals and we run out of ideas. We tend to serve several fingerfoods but we also tend to repeat the same recipes, therefore I propose you a healthy and flavourful spread that you can eat with veggies, bread...

INGREDIENTS
  • 2 red tomatos medium size
  • 4 rehidrate sundried tomatos (keep the water used for rehidrating them for the next recipr)
  • 1 tablespoon of roasted pinenuts
  • Salt
  • Sugar
  • Olive oil
  • 1 slice of stale bread
In a pan pour four tablespoons of oil and, when hot fry the bread slice. When golden on both sides, take it out of the pan, take the pan out of the heat and put the 2 pealed and chopped tomatos (be carefull as they can splatter) inside. Cook until the water that the tomatos have left reduces, add some salt and a bit of sugar (quantities will vary depending on how acid tomatos are), stir and let it cool. 
In the same pan you've used for the tomato, and once you've set aside the tomato, add the pinenuts and roast them.
Add the bread, pinenuts, tomatos in a blender and blend for a short while (time will also vary here depending on how powerful you're blender is) letting the spread have some chunks in it.
You can eat the spread with veggies, add it yo pasta or eat it with fish or meat but, however it is, enjoy it! :)

Galletas de canela/ Cinnamon cookies (Snickerdoodles)

Hay recetas que pruebas y luego te tiras años persiguiéndolas y, hasta que las consigues, te has dejado años y otras que te comentan que están buenas, te fias, piedes la receta y te encanta. Esta es de las segundas. Llegó a mi a través de la compañera de piso americana de A en Berlín.
Como veréis no tienen ninguna dificultad, son maravillosamente ligeras y podrías comértelas todas del tirón.


INGREDIENTES:  Nota: La receta original es un cups, así que como 1 cup son 250ml haceros con un medidor de líquidos y rellenad hasta donde os corresponda 
  • 125ml azúcar (más un poco más para rebozar las galletas)
  • 125ml mantequilla (a punto pomada)
  • 1 huevo
  • 1/2 cucharadita de esencia de vainilla
  • 375ml harina
  • 1 1/2 cucharadita de canela (más 1/2 para rebozar)
  • 1 1/2 cucharadita de levadura
  • 1/4 cucharadita de sal
Precalentad el horno a 180º.
Mezclad la mantequilla con el azúcar hasta obtener una crema. Agregad la vainilla y el huevo y batidlo todo bien. Incorporad la harina, canela, sal y levadura y mezcladlo todo bien hasta obtener una pasta en la que todo esté bien integrado. Tapad la masa y refrigerad durante 2 horas.
Con una cucharadita id sacando bolitas de masa, redondeadlas con las manos y rebozadlas en azúcar con canela. Colocadlas en una bandeja de horno un poco engrasada.
Hornead durante 10 minutos y sacad a una rejilla para que se enfrien.

There are some recipes that, after trying them, you search for them until you finally obtain the recipe (either you ask for it or you experiment) and other that, even without trying them, they tell you taht are really good and when you obtain the recipe you do love them. This one is one belongs to the 2º group. It came to me throughout A's american flatmate in Berlin.
As you will see this recipe is easy peasy, the cookies are wonderfuly subtle and you could eat them all in a bite.

INGREDIENTS: 
  • 1/2 cup sugar (plus some extra for coating them)
  • 1/2 cup of butter (room temperature)
  • 1 egg
  • 1/2 teaspoon of vanilla extract
  • 1 1/2 cup of flour
  • 1 1/2 teaspoon of cinnamon (plus 1/2 for coating the cookies)
  • 1 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
Preheat the oven to 180º.
Mix the butter with the sugar until creamy. Add the vanilla extract and the egg and beat it until it's well incorporated. Pour in the flour, cinnamon, salt and baking powder and mix well to avoid lumps. Cover the dough and cool in the fridge for 2 hours. 
With a teaspoon get small dough balls and roll them in sugar and cinnamon. Place them in an oven tray slightly greased.
Bake for 10 minutes and place over a rack to cool them.

Ensalada de mango y langostinos / Mango and scampi salad

Lo se, tengo esto más bien abandonado, pero es que ha llegado el otoño y , al margen de cursos, viajes y demás, no paro mucho por casa, y cuando lo hago, estoy a otros menesteres. El caso es que este verano probé en un vietnamita una ensalada que decidí convertir en una de mis favoritas para este año. Fácil, refrescante y con un sabor diferente.
En la ensalada original los langostinos eran cocidos, pero a la plancha ganan en sabor consiguiendo que el mango no ocupe todo.

INGREDIENTES:  (Las cantidades, pues dependerá del número de comensales)
  • Lechuga (podéis utilizar el tipo que más os guste)
  • 1 mango en su punto. (una cucharada de mango picado por comensal)
  • Langostinos crudos (calculad unos 3 por persona)
  • Cacahuetes (al gusto)
  • Vinagre de arroz
  • Aceite suave
  • Sal

En una sartén caliente, haced los langostinos a la plancha, con unas gotas de aceite y sal. Cuando la cáscara empiece a cambiar de color dadles la vuelta, esperad a que se hagan por el lado contratio y retiradlos a un plato para que se templen (y no os queméis al pelarlos).
Por otro lado, lavad la lechuga, escurridla bien, partidla en trocitos y colocadla en el fondo de una plato o ensaladera. Pelad el mango, partid la carne en trocitos pequeños y agregarlos por encima de la lechuga. Añadid los langostinos pelados y partidos por la mitad y unos cuantos cacachuetes tostados. 
En un botecito o vaso poned la mitad de vinagre de arroz y la mitad de aceite suave y sal, removedlo todo bien y aliñad la ensalada.

I know, I've got the blog a bit abbandoned, but with the beggining of autumn I've got several lectures to attend, trips to make and I' don't spend that much time at home and when I'me there, I have to do other stuff.  The thing is this summer I tried this salad and I decided to make it one of my favourite, at least for this year. Easy, refreshing and with a different flavour.
The original salad used boiled scampi, but they have much more flavour if you grill them because it balances the flavour with the mango.

INGREDIENTS:  (Depends on how many peaople are eating it)
  • Lettuce (whatever type you prefere)
  • 1 mango (1 tablespoon of mango dices for person)
  • Raw scampi (3 or 4 for person)
  • Roasted Peanuts
  • Rice vinegar
  • Oil
  • Salt

In a hot pan place a few drops of oil and the scampi, with some salt.  Once the shell changes color, flip them over and wait them to cook on the other side. Take them out of the pan and wait them to cool down so you don't burn your fingers while peeling them.
Meanwhile rinse the lettuce, dry it, cut it in small pieces and place it in a salad bowl. Peel the mango, cut the meat in small dices and place them over the lettuce. Add the scampi and peanuts. 
For the dressing, in a small jar or bowl the same quantity of rice vinegar and oil and some salt. Mix well and pour over the salad.
