Tomates secos confitados/ Confited sun dried tomatoes


Muchas veces vemos en el supermercado que venden tomates secos y la mayoría nunca sabeis qué es lo que podeis hacer con ellos. Aportan a cualquier guiso, pasta o ensalada mucho sabor si los partís en trocitos, pero yo os recomendaría que os animaseis a confitarlos. De esta forma ganan en sabor y textura y no os los encontrareis en medio del plato como si de pasas saladas se tratasen. También así los podreis poner como acompañamiento de alguna carne o sobre unas rebanadas de pan caliente.

Esta receta, al contrario que las anteriores, no requiere mucha precisión en los ingredientes, ya que variarán en función del recipiente utilizado.

INGREDIENTES:
  • Tomates secos
  • Aceite de oliva
  • Agua
  • Ajo
  • Orégano
Poned agua a calentar en un cazo y antes de que hierva, agregad los tomates secos y retirad del fuego. Esperad unos 10-20 minutos hasta que estén hidratados (esto dependerá de la calidad de los tomates). Que nadie espere que aquí le vaya a quedar como resultado un tomate fresco, simplemente estará un poco más jugoso y habrá dejado de ser duro.

Cuando estén, retirad del agua y ponedlos sobre un papel de cocina para secarlos.

En un cazo, poned los tomates, el ajo (más o menos un diente partido por la mitad por cada 20 medios tomates), orégano (una cucharada por diente de ajo) y cubrid todo con aceite. Ponedlo a fuego lo más suave posible y dejadlo que se vaya confitando durante unos 20 minutos.

Una vez pasado este tiempo, se retiran y embotan. Aguantan bastante si los teneis en la nevera, pero para consumirlos tal cual es mejor sacarlos un poquito antes para que se templen.

Quite often we see in supermarkets that sun dried tomatoes are sold, but most of you never know what you can do with them. It provides flavour to stews, pasta and salads if you cut them into small pieces, but I encourage you to confit them. In this way they gain flavour and texture and you will avoid finding them as if they were salty raisins. You can also serve them as side dish to meat or over warm bread.

This recipe, unlike the ones I've posted before, doesn't require much precision with the ingredients, as quantities willl vary depending of the saucepan you use.

INGREDIENTS:
  • Sun dried tomatoes
  • Olive oil
  • Water
  • Garlic
  • Oregano
Heat water in a saucepan and, before it boils, drop in the tomatoes and remove from heat. Wait from 10 to 20 minutes until they are juicy (this will depend on the quality of the tomatoes).
Hope that no-one expects that these tomatoes come out as if they were fresh, they will simply be a bit juicier and softer.

When it's ready, take them out of the water and set them over a paper towel in order to dry them.

In a saucepan put the tomatoes, garlic (more or less a garlic clove for every 20 half tomatoes), oregano (a tablespoon for each garlic clove) and cover with oil.

Cook to low heat and let it confit for about 20 minutes.

Once the 20 minutes have passed, put the content of the saucepan in a jar. You can preserve them in the fridge for quite some time. They are better if you take the tomatoes out of the fridge and let them warm up before eating them.

Perdón por tardar en contestar... no, van sin azúcar. Se confita cocinando lo que sea en el aceite a baja temperatura. Además, los tomates ya son bastante dulces de por si.
