Cuenquitos de jamón, queso y pimientos/ Ham cups with cheese and peppers

¡¡¡100 posts!!!   

¡Que ilusión llegar a ellos!. Llevo un par de semanas pensando en hacer alguna tarta o algo así espectacular para celebrarlo pero al final me he decantado por estos aperitivitos. En breve será mi cumpleaños y llevo días pensando en que, para celebrarlo me gustaría hacer una cena de picoteo mono, así que me paso el día componiendo menus diferentes. Este me parece un aperitivo muy fácil de hacer y que resulta cómodo y muy rico, así que os lo recomiendo si tenéis invitados y queréis sorprenderles. Yo aprovecho y lo utilizo para celebrar los 100 posts con vosotros :)

INGREDIENTES (Para 12 piezas)
  • 6 lonchas de jamón serrano
  • Queso camembert (pero podéis usar cualquier otro queso de pasta blanda)
  • 1 pimiento de piquillo asado
  • 1/4 de pimiento verde italiano
  • Aceite de oliva (optional)

Partid cada loncha de jamón por la mitad y colocad cada mitad en el fondo de una tacita de café y metedla al microondas durante 5 seg. Sacadlas y dejar el jamón en un plato. Repetid el proceso hasta que tengais todos.
Partid trocitos de queso camembert en cubitos de 0.5cm y colocadlos en el centro del jamón. Picad los pimientos y echad por encima del queso. Podéis regarlo con unas gotitas de aceite de oliva.
Servid con rodajitas de pan tostado.

100 posts!!! 

I never thought I would get to them. I've been thinking for a couple of weeks about making a cake or something fancy to celebrate it but I finally decided to make these appetizers. It'll shortly be my birthday and I've been thinking about cooking a fingerfood dinner party, so I spend my days thinking about different menus.  This is an easy, quick and tasty appetizer, so I reccomend it if you've got guests and want to surprise them. I use it to celebrate the post 100 with you :)

INGREDIENTS (For 12 pieces)
  • 6 slices of serrano ham
  • Camembert cheese (but you can use any other soft cheese)
  • 1 roasted piquillo pepper (you can use roasted red pepper)
  • 1/4 of green italian pepper
  • Olive oil (optional)
Cut each ham slice in half and place it at the end of an expresso cup. Microwave it for 5 seconds, take them out of the microwave and place the ham in a plate. Repeat the process until you've got all your cups.
Cut the cheese in small cubes (around 0.5cm) and introduce them in the middel of the ham. Chop the peppers and sprinkle them over the cheese. You can pour some olive oil drops on top.
Serve with toasted bread slices.

Palomitas dulces / Sweet popcorn


Palomitas (millo, rositas de maíz, pochoclos, pururú, pop, canchita, canguil, pororó, cotufas, gallitos, poporopos, crispetas, maíz pira, chivitas, cabritas de maíz, maíz tote, pipocas, rosetas, rosas, roscas, tostones, o cocaleca ), una de esas cosas que en español tienen mil y un nombres diferentes en función de la región en la que te encuentras.
Siempre pensé que serían muy difíciles de hacer. Quizás influenciada por el precio que tienen en los cines, donde parece que el caramelo ha de estar hecho con sangre de unicornio, ¡pero no! son hiper-fáciles. Perfectas para una sesión de cine casero o como picoteo para una fiesta :)
Os dejo con la canción de "If you wanna be happy" de Jimmy Soul, que siempre me ha hecho mucha gracia y me parece perfecta para preparar casi cualquier cosa.


INGREDIENTES: (para un tamaño medio de palomitas en el cine)
  • 50g maíz para palomitas
  • 1 cucharada de aceite
  • 60g azúcar moreno
  • 30g mantequilla
  • Sal 

En una cacerola amplia poned el aceite y empezad a calentarlo. Cuando esté caliente, agregad el maíz y tapad. Agitad la cacerola de vez en cuando para que no se os queme el maíz ni las palomitas que vayan explotando. Cuando dejen de explotar retirarlas del fuego y volcarlas en un cuenco. Agregad la sal que queráis.
En la misma cacerola que habéis usado para las palomitas añadid el azúcar moreno y ponelo a fuego medio-suave. No lo removais hasta que no veais que se hace caramelo. No hay que tostarlo, así que con que esté líquida el azúcar vale. Agregad la mantequilla y mezcladlo todo bien. Inmediatamente agregad las palomitas y removedlo para que se reparta bien el caramelo por todas. 
Devolvedlas al cuenco y prepararos para ver una buena película :)

Popcorn, one of those things that really vary it's name depending where in the world you are.  In languages like Spanish gets to have more than 15 different names.
I always thought sweet popcorn was very difficult to make. Maybe this was conditioned by the weird price it has in the cinema, where it seems to be made with unicorn's blood, but no! it's super easy to make!. Perfect snack for a film session or as nibbling for a party :)
I also link you to the song "If you wanna be happy" by Jimmy Soul, which I've always found very funny and it's great for prepareing almost anything.  

INGREDIENTS: (for one medium size serving)
  • 50g popcorn kernels
  • 1 tablespoon of oil
  • 60g light brown sugar
  • 30g butter
  • Salt

In a big pot put the oil and start to heat it. Once hot, pour the kernels and cover with a lid. Shake every now and then to make sure it doesn't burn and, nor the kernels or the final popcorn. Once you stop hearing the kernels popping take them out of the heat and place them in a bowl. Add as much salt as you want.
In the same pot you've made the popcorn add the sugar and heat it to medium-low heat. Don't stri until you don"t see the sugar is melted. You don't have to make it a dark caramel, so it'll be ok just liquifying the sugar. Once it's liquid, add the butter and stir everything. Pour in the popcorn and mix it with the caramel so that all the popcorn gets a light caramel coating. 
Put them back in a bowl and prepare to enjoy a nice film :)

Croquetas de boletus y champiñón/ Boletus and mushroom croquettes

Hoy en día uno encuentra croquetas de boletus en casi cualquier sitio, lo único es que en muchos de los casos lo dificil es encontrar el boletus en la masa. En casa las croquetas gustan con bien de relleno, cremosas, pero que se pueda diferenciar bien de qué son.
El único inconveniente que tienen las croquetas es el hecho de que haya que hacerlas con tiempo. A uno no le puede entrar un mono repentino, hacerlas y resolverlo, así que os recomiendo que cuando hagáis congeléis. Además, siempre son una buena opción de aperitivo para la típica cena de improviso.

INGREDIENTES ( De 15 a 20 croquetas medianas)
  • 50g mantequilla
  • 2 cucharadas de harina
  • 300-350 ml de leche 
  • 1 champiñón gordo o 2 pequeños
  • 3g de boletus secos
  • Sal y pimienta
  • 1 vaso de agua templada
  • 1 huevo
  • Pan rallado (si es casero mejor)
  • Aceite de oliva (para freir)

Poned a hidratar los boletus en el vaso de agua.
En una sartén, a fuego medio, fundid la mantequilla y cuando esté líquida agregad la harina, removed unas cuantas veces y empezad a añadir la leche. Agregad la mitad, removed hasta que se haga una pasta más densa pero sin grumos e id añadiendo a poquitos hasta que esté cremosa y suave. Echad sal y pimienta al gusto y agregad el champiñón limpio y los boletus hidratados, todo picado. Junto con las setas echad con cuidado medio vaso del agua donde habéis hidratado los boletus (tened mucho cuidado de no remover el agua porque si no os caerá tierra). Unificadlo bien con la bechamel y dejad que cueza unos pocos segundos. Id removiendo y cuando veais que la masa se empieza a despegar de la sartén, ese será el momento de retirarla del fuego.

Volcad la masa en un plato y esperad hasta que esté bien fría y cuando esté un poco templado cubridlo . Esto llevará como medio día, por lo que si haceis la masa por la noche será mejor.
Formad las croquetas con las manos (más o menos grandes en función de como os gusten). Batid el huevo y pasadlas primero por huevo y después por el pan rallado. Poned 2 dedos de aceite en  la sarten y freirlas en aceite caliente. Al sacarlas, ponedlas en papel absorvente antes de colocarlas en el plato para servir. Hay que comérselas mientras estén aun calentitas.
Como os conté en el caso de las croquetas de merluza, también se pueden congelar antes de freirlas. En este caso se introducen en la sarten con el aceite caliente y se baja a temperatura media durante la fritura. No hace falta descongelarlas previamente.

Nowadays you can find almost everywhere funghi croquettes, but the only drawback is that in most places the difficult part is finding the funghi inside the croquette.  At home we like croquettes with a lot of stuffing, creamy, but that you can see what you're eating.
The only disadvantage with the croquettes is that you hace to make them in advance. You can't suddenly have the will to eat them, cook them and solve it, so I reccomend you that when you make batter you make more than what you will usually eat and freeze them.It's also a great appetizer in case you've got unsepected guests for dinner.


INGREDIENTS ( For 15 to 20 medium croquetas)
  • 50g butter
  • 2 tablespoons of flour
  • 300-350 ml milk
  • 1 big mushroom or 2 small ones
  • 3g dried funghi porcini
  • Salt & pepper
  • 1 glass of room temperature water
  • 1 egg
  • Bread crumbs
  • Olive oil (for frying)

Soak the funghi porcini in the water.
In a pan, to medium heat, melt the butter and once it's liquid add the flour and stir several times. Pour in half of the milk and continue stiring until you obtain a dense butter without lumps. Continue adding milk until it's soft and creamy. Add salt, pepper, both types of mushrooms chopped in small pieces and half the glass of water were you've soaked the funghi porcini. (be careful not moving the water too much or you'll end with some soil in your croquetts). Unify everything and once you see the batter starts to detach from the pan put it in a plate and let il cool.  Once it's cool,  introduce it in the fridge. It takes about half a day to cool so it's better if you make it at night.

Shape the croquettes (size will depende on how you like them most). Beat the egg and introduce them firstly in the egg and them coat them with the bread crumbs. In a pan heat 3cm of oil and fry the croquettes when it's hot. Before serving them place the croquettes over kitchen paper. Eat them while they are still hot.


As I told you with the hake croquettes you can also freeze them before frying them. In this case, when frying, low to medium temperature the oil once you've introduced them. You won't need to defrost them before frying.

Galletas de avellana/ Hazelnut cookies

Llevo, casi desde los primeros posts del blog para colgar esta receta y aun no me había animado. Estas galletas son las preferidas de mi madre con mucha diferencia, pero la primera vez que las probé fue hace unos 20 años, en una fiesta que hizo en casa y una compañera suya hizo unas muy muy parecidas a las que os pongo yo aquí. Estas, están sacadas de un libro de cocina griega de la editorial Könemann de hace mil años y cada vez que las hago (y con esta receta salen unas 60 galletitas) hay que racionarlas o nos las comeríamos todas del tirón.
La textura es muy parecida a las pastas de mantequilla pero con un sabor a avellana que le da un toque especial. Altamente adictivas, el único problema :P

INGREDIENTES:
  • 100g de avellanas
  • 1 yema de huevo
  • 1 cucharada de coñac
  • 1 cucharadita de levadura
  • 250g de mantequilla
  • 1/2 cup de azúcar (+-112g)
  • 1/2 cucharadita de esencia de vainilla
  • 3 cups de harina (375g)

Precalentad el horno a 180º
Con ayuda de una picadora picad el azúcar hasta que quede muy finita (si queréis ahorraros esto podéis usar directamente azúcar glass) y después picad las avellanas.
En un cuenco fundid la mantequilla y mezcladla con el azúcar hasta que quede  una crema ligera. Añadid la yema de huevo, la vainilla y el coñac y volved a batir todo. Agregad las avellanas picadas, la harina y la levadura y mezcladlo todo bien hasta obtener una masa blandita y sin grumos de harina.
Con ayuda de una cucharita de café id sacando bolitas de masa y colocadlas en una bandeja de horno (no hace falta que la untéis con nada).
Hornead hasta que estén doradas, enfriadlas en una rejilla y ¡disfrutadlas! :)

I've been willing to post this recipe since the beggining of the blog and until now I hadn't found the chance. These are, by far, my mom's favourite cookies but the first time I tasted them was in a party she made at home, and one of her collegues made ones very very similar to this ones. Each time I  bake them (with this recipe you'll obtain around 60 cookies) we have to ration them or, otherwise, we would eat them in one sitting. Texture resembles spritz butter cookies, but with a hazelnut twist that gives them that special touch. The only drawback is that they are highly addictive. :P

INGREDIENTS:
  • 100g hazelnuts
  • 1 egg yolk
  • 1 tablespoon of brandy
  • 1 teaspoon of baking powder
  • 250g butter
  • 1/2 cup caster sugar (+-112g)
  • 1/2 teaspoon of vanilla essence
  • 3 cups of flour (375g)
Preheat the oven to 180º
Helping yourselves with a mincermake the sugar turn into a softer powder (you can use icing sugar if you prefere) and chop the hazelnuts.
In a big bowl melt the butter and mix it with the sugar to obtain a fluffy batter. Add the egg yolk, the vanilla and the brandy and beat again. Pour in the flour, hazelnuts and baking powder and blend in until you obtain a soft and lumpless dough.
With a teaspoon start picking up dough, make it small balls and place the in an oven tray (you won't need to put anything on it)
Bake them until they are golden, cool them in a rack and enjoy them! :)

Tejas de avellana/ Hazelnut tuilles


Tejas... mmmmm.... :) como me gustan. Tardé un montón de tiempo en ponerme a hacer pensando que era dificil, pero resultó que se hacen en nada y queda muy muy bien. Además, la masa cunde muchísimo más de lo que parece que va a hacerlo inicialmente. Solo tienen una pega, que cuando te comes una ¡no hay forma humana de parar!. En este caso son de avellanas porque era lo que me había sobrado molido de unas galletitas que postearé en breve, pero las podeís hacer con almendras, cacahuetes o lo que más os guste (hasta sin nada).
Animaros que son super fáciles :)


INGREDIENTES: (15 tejas)
  • 45g de clara de huevo (1 clara)
  • 65g azúcar
  • 40g harina
  • 50g avellana molida
  • 35g mantequilla

Precalentad el horno a 180º.
Fundid la mantequilla y mezclad con el resto de los ingredientes en un cuenco. Batid bien hasta que se hayan deshecho todos los posibles grumos.
Extended una cucharadita pequeña de masa en la placa del horno (si no tenéis o no tenéis suficientes, porque hacen falta varias hacedlo en alguna fuente para el horno, que se consigue una distribución del calor más uniforme que si si hace con la rejilla y papel de plata) dándole la forma que queráis hasta que sea lo más fina posible. No os asustéis si casi ha perdido el color blanquecino, que cuanto más finita, más crujiente. Repetid las veces que hagan falta para completar la placa de horno.
Hornead hasta que estén doradas (el tiempo dependerá del grosor que les hayáis dado y de vuestro horno), pero entre 5 y 8 min.
Sacadlas del horno y , si queréis darles forma curva, según las saquéis colocadas sobre el rodillo o algún utensilio cilíndrico. Se endurecen muy rápido así que os tendréis que dar prisa.

Tuilles... mmmmmm... :) I love them. It took me a lot of time to start making them because I thought it was a difficult procedure but it turned out to be easy and you obtain a great outcome. And, you'll find the batter lasts for longer than it initially seams. They only have a drawback, once you eat one there's no way of stopping! In this case they are made with hazzelnuts beacause I had some spare from some cookies I will shortly post, but you can make them with almonds, peanuts or whatever you prefere (even plain).
Bake them, they're so easy! :)

INGREDIENTS: (15 tuilles)

  • 45g egg white (1 egg white)
  • 65g caster sugar
  • 40g flour
  • 50g grounded hazelnuts
  • 35g butter

Preheat the oven to 180º. (350 F)
Melt the butter and mix it with the rest of the infredients in a bowl. Beat thoroughly until there are no lumps.
Place a teaspoon of dough in an oven tray (in case you only have the rack or you are short of oven trays, place them over any metal container, so you obtain a more equal distribution of the heat while cooking) and shape it until it's as thin as possible. If it looses the white colour don't panic, the thinner the better and crunchier. Repeat until you are out of dough.
Bake until golden (time will depend on shape, thickness and oven) but around 5 to 8 minutes.
Take them out of the oven with a spatula and, in case you want them to have a curved shape, place them over the rolling pin or any other curved surface as you do so. They harden quick, so you'll have to be it too.
Enjoy them :)

Piruletas de chocolate Pollock / Pollock Chocolate lollipops

  Últimamente, como os conté hace poco, me hacen propuestas de lo más divertidas de realizar. En este caso fue M, continuando con el apartado de "Saboreando el arte" quien me propuso hacer algo para su nuevo blog (El Cuentacuadros) y su sección de "Cuentacuadros comestibles". La idea era que fuese algo que pudiesen hacer niños (y no tan niños) aplicando el "action painting" de Jackson Pollock.




 INGREDIENTES (Para 4 piruletas)
  • 50g chocolate de cobertura
  • 50g chocolate blanco
  •  Pimienta o fideos de colores (al gusto)
  Como os contaba antes esta receta está pensada para hacer con niños, por lo que no tiene ninguna complicación. Fundid el chocolate en dos tacitas de café en el microondas (o como más facil os resulte) y cuando veaís que está casi fundido del todo sacadlo y terminad de deshacer los trozos que queden. Así evitaréis que se os queme y además contribuye a darle un poco más de brillo.
Sobre papel de plata, papel antiadherente o un silpat colocad un poco de chocolate. Con una cucharita dadle la forma que queraís. Colocad encima el palito que useis para darle forma de piruleta y agregad un poco más del mismo chocolate por encima. Terminad de darle forma y decorad como sin fuese una pintura de Pollock mediante "action painting" con el color de chocolate opuesto al que hayais elegido para la base. Cuando esté terminado echadle un poco de pimienta o fideillos de colores machacados. 
Lo único malo es que tenedréis que esperar hasta que se enfrien. Mientras podéis comeros lo que quede en las tacitas :)
Despegadlas con cuidado cuando estén bien frias y el chocolate duro y ya podéis disfrutar de ellas. ;)

As I recently told you, lately I've been given several cooking challenges that were really entretaining to make. In this case it was María, continuing with the "Savouring art" section, who proposed something for her new blog and her "Edible paintingtellers" section. The idea was to make something that kids (and not so kids) could make applying Jackson Pollock's "Action painting".


 INGREDIENTS (For 4 lollipops)
  • 50g dark chocolate
  • 50g white chocolate
  •  Black pepper or colour sprinkles (it's on you how much you use)
  As I've told you the idea is to make this recipe with kids, so it has no difficulty at all. Melt the chocolates in two different cups in the microwave (or as you prefer) and when you see it's almost melted take it out of the microwave and finish melting it until the chocolate chunks are compleatly liquid. This way you will avoid the chocolate from melting and  it will be more shiny.
Put some chocolate over tin foil, baking paper or a sikpat. With a teaspoon give it the shape you want to. Place a stick over it and add more chocolate on top. Give the final touches to the shape and decorate with the opposite colour of chocolate with "action painting" as if it was a Pollock's work. Once it's finished, add some colour sprinkles or pepper on top.
The only drawbak is that you will need the lollipops to cool. Meanwhile you can eat the remaining chocolate in the cups. :)
Once the chocolate has hardened detach them and enjoy them ;)

Carne de membrillo / Quince meat

Esta receta fue fruto de una reunión de amigas de otoño, de esas que recuerdan a las de las señoras mayores de los pueblos en las que todas se reunen entorno a una mesa para realizar una actividad. La idea inicial de hacer carne de membrillo surgió porque la madre de A tiene un membrillo y había dado una señora cosecha. P propuso hacer la carne en su panificadora, ya que la usa para hacer mermelada y salen bien, pero no resultó con el membrillo, así que experimentamos con la mitad de los membrillos que no habíamos usado para hacerlo como siempre, en cazuela. Después de mirar varias recetas por internet concluimos que lo mejor iba a ser inventárselo, porque cada una daba un consejo y las cantidades de todo eran de lo más variopintas. Por lo tanto os dejo aquí la receta que acabamos haciendo nosotras y que salió con una textura cremosa y nada apelmazada.

INGREDIENTES:
- 5 membrillos grandes
- 600g de azúcar
- 1 cucharada de zumo de limón
- 1 cucharada de agua

Pelad los membrillos (si, lo se, es un tostón y casi imposible pero iréis mucho más rápido) y partidlos en trozos de tamaño medio. Os recomiendo que uséis un pelador de patatas para pelar, que acabó por ser la forma más rápida y efectiva. 
En una cazuela grande poned los trozos de membrillo, el limón, agua y azúcar a fuego bajo. Es una receta de estas de toda la vida, así que a partir de este momento consiste en remover y tener paciencia. Tapad la cazuela y removedlo bien de vez en cuando durante más o menos media hora. Una vez veaís que el membrillo está blando batidlo con la batidora. No hace falta que sea todo un puré, podéis dejar trocitos para que varie ligeramente la textura y quede más natural.
Dejad que hierva a fuego suave y destapado. A partir de este momento es cuando tenéis que estar más pendientes. Subid el fuego ligeramente y removed constantemente para evitar que se pegue al fondo de la cazuela. Empezará a ser cada vez más denso pero el momento de retirarlo será cuando veáis que al moverlo se despega de las paredes de una forma evidente. 
Ponedlo en un molde a que se enfrie y comedlo cuando y como os apetezca :) 

Como sugerencia os recomiendo unas tostaditas con queso y piñones

This recipe is the result of an autumn friend meeting , one of those that resemble the ones elder women make in small villages to make the same activity. The idea emerged from A, because she had a lot of quinces from her mother's tree, and wanted to make some quince meat with them. Initially the idea was making the meat in P's bread machine, as it usually makes good marmalades, but it didn't turn out with the quince meat so we had to make an experiment the old fashion way, in a pot. After lloking several recipes in internet we decided to make our own, as each one gave a different trick and the quantities and ingredients varied hugely. So, what I leave you here is the result of our own way of making it, with a creamy and not extreamly consistent texture.


INGREDIENTS:
- 5 big quinces
- 600g sugar
- 1 tablespoon of lemon juice
- 1 tablespoon of water

Peel the quinces (yeah, I know it's complicated and it takes time, but you'll end up saving it) and cut them in medium size pieces. I recomend you use a potato peeler, it turned out beeing the most effective way.
In a big pot place the quince, lemon, sugar and water and cook to low heat. It's an oldtime style recipe, so from now it will be mostly stiring.
Cover the pot and stir every now and then for around half an hour. Once you see the quince is soft blend with the hand blender. You don't need it to be too creamy, leave some chunks to make a more natural texture. 
Leave it to medium heat and uncovered. From now on you'll have to be more aware. Stir constantly to avoid it from sticking to the bottom of the pot. It will become more dense as you stir but the moment to take it out of the fire will be when, while mooving it, the paste detatches from the pot in a consistent way.
Place it in a mould to let it cool and eat it when and with what you like :)

I suggest you eating it over a hot toast with cheese and pinenuts.
