Canelones de calabaza, cebolla caramelizada, champiñón y queso / Butternut squash, caramelized onion, mushroom and cheese canelonni

Lo sé, hace muchísimo que no actualizo, y lo peor es que no es porque ultimamente no haya cocinado. Simplemente no he tenido tiempo de ponerme a escribir y fotografiar. De hecho, estas no son las mejores fotos, pero bueno, la receta es rica, que es lo que importa.
Esta receta surgió a raíz de una cena en la que una de las comensales era intolerante a la lactosa, así que pensé en un canelón vegetal que pudiese ser jugoso si no se le ponía ni bechamel ni queso. Como para el resto de los comensales el queso no era un problema decicí que los demás irían rellenos con crema de queso para añadir cremosidad a la receta. Aquí os la dejo para que la hagais como más os inspire ;)


INGREDIENTES:
  • 500 g de calabaza
  • 4 champiñones
  • Cebolla caramelizada
  • 150g de queso untable
  • 12 placas de canelones
  • Agua
  • Sal
  • Pimienta
  • Aceite de oliva
  • Queso rallado

Preparad los canelones (según se especifique en cada paquete o si hacéis la masa en casa según convenga la receta). Escurridlos bien y dejadlos sobre un trapo (si los habéis tenido que cocer, claro está).

Pelad la calabaza y partidla en daditos pequeños. En una sartén caliente agregad un par de cucharadas de aceite y la calabaza. Salpimentad y cocinad hasta que estén los trozos blanditos.
Mientras la calabaza se está haciendo partid el champiñón por la mitad y en láminas. Retirad la calabaza de la sartén y saltead el champiñón.
Colocad una cucharadita rasa de queso untable en cada canelón, calabaza, champión y cebolla al gusto. No os paseís con la cebolla que la calabaza ya es de por sí bastante dulce. Enrollad los canelones y colocadlos en una placa engrasada con un poquito de aceite de oliva.
Espolvoread con bien de queso por encima, gratinad y servid! :)

I know, it's been a long time since without posts and, worst of all, it's not because I haven't been cooking. 
It's just I haven't had enough time to write and take pictures after doing so. In fact, these arenn't the best pictures, but the recipe is quite nice, and that's what matters.
I made up this recipe for a dinner with a lactose intolerant friend. As she couldn't eat any type of dairy produce I had to think of a something that will be both suitable for her and the other guests. In order to make it softer I added cream cheese inside the cannelloni. I leave you the recipe here so you can prepare them as you prefer ;)

INGREDIENTS:
  • 500 g butternut squash
  • 4 mushrooms
  • Caramelized onion
  • 150g cream cheese
  • 12 cannelloni
  • Water
  • Salt
  • Pepper
  • Olive oil
  • Grated cheese

Prepare the cannelloni (the method with depend on the type of pasta you buy, so follow the indications they give you) In case they are boiled, drain the water and dry them with a clean cloth.
Peel the butternut squash and cut it into small dices. In a heated pan add a couple of tablespoons of oil and the squash. Add salt and pepper and cook until soft and golden. 
While the squash is cooking, clean the mushrooms and cut it in slices. Take the squash of the pan, add the mushroom and saute them for a couple of minutes.
Add some cream cheese to each cannelloni and place on top the squash, mushrooms and onion to taste. Beware not to put too much onion as the squash is already pretty sweet.  Roll the canelloni (if they are not the tube version) and place them over a greased oven tray.
Sprinkle grated cheese over the cannelloni, bake in the oven until the cheese melts and serve :)

Masa de empanada / Empanada dough

Y pensaréis, ¿para qué quiero yo saber cómo se hace la masa de la empanada si se puede comprar hecha y lo rico es el relleno? Pues porque los rellenos suelen ser más o menos decentes pero la masa puede marcar la diferencia. Así, entre otras cosas, cada uno puede rellenar su propia empanada de lo que más rabia le dé. A cada uno le gusta la empanada de una cosa y los ingredientes siempre son variables, así que de esta forma podéis rellenarla de lo que más os apetezca y aprovechar que ya le queda poco a la temporada de horno (al menos en este lado del mundo).

INGREDIENTES (para una empanada de 20 x 30cm)

  • 225g harina de trigo
  • 8 cucharadas aceite de oliva
  • 14 cucharadas agua
  • 1 cucharadita sal
  • 1 cucharadita levadura

En un cuenco colocad la harina, levadura y sal y haced un montoncito con ello, dejando un agujero en el centro. Añadid los líquidos en el interior y empezad a mezclarlo. Cuando esté todo bien integrado amasad con fuerza para que quede una masa elástica que no se tiene que pegar a las manos. Haced una bola con ella y dejadla reposar una media hora.
Precalentad el horno a 180º.
Espolvoread un poco de harina sobre la encimera y estirad hasta que esté bastante finita. Colocadla sobre la bandeja que vayais a usar para meterla al horno y rellenadla de lo que más os apetezca. Os recomiendo algún relleno jugosito. Cerradla bien.
Hornead a 180º, en la mitad del horno, durante unos 25min. (dependerá de lo gorda que hagáis la masa). Cuando veáis que está tostada sacad del horno y estará lista para comer, caliente o fría.

And you'll think ¿why the hell would I like to know how to make the empanada dough when you can buy it and it's the filling what it's really nice? Because fillings are almost always ok, but the dough can make a whole difference. This way, you can fill it with what you prefer. Everyone prefers a different filling and ingredients are changable, so this way you can make your perfect "empanada" and use the last days of oven before summer (at leat on this side of the world).

INGREDIENTS (For a 20 x 30cm empanada)
  • 225g wheat flour
  • 8 tablespoons of olive oil
  • 14 tablespoons of water
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder

In a big bowl place the flour, salt, baking powder and make a volcano with it. Add the liquid in he centre and mix everything. Once well mixed knead it until you obtain an elastic dough that doesn't stick to your hands. Make a ball with it and let it settle for half an hour.
Preheat the oven to 180º.
Sprinkle some flour over the counter top and roll it out until thin. Place it over an oven tray and fill it of what you prefer. I recommend you a juicy but not liquid filling. Close it well.
Bake it to 180º, in the middel of the oven, for around 25min. (that will depend on how thick you roll out the dough). Once you see it's golden brown take it out of the oven and enjoy it, hot or cold.

Fresas rellenas de tarta de queso y chocolate / Cheese cake stuffed strawberries with chocolate

¡Hoy es mi cumpleaños! Así que para celebralo quería hacerme un desayuno un poco especial.
El otro día había oferta de fresas en el supermercado y, como son bastante grandes y me compré un kilo, estuve mirando recetas y vi esta receta por internet. Pensé que le faltaba chocolate, así que intruduje los fideitos para que les diesen el punto chocolateado. También pensé en cubrirlas, pero luego reflexioné, porque el chocolate si no se iba a comer todo el sabor, pero os lo dejo como opción.




INGREDIENTES (Para 4 personas)
  • 12 fresas grandes
  • 100g de queso untable
  • 1 cucharada de leche condensada
  • 4 cucharadas de fideos de chocolate (una para el relleno y las otras para decorar)
  • 2 galletas (tipo Digestive)

Lavar las fresas y cortad la parte de arriba. Con una puntilla o un cuchillo finito afilado vaciad las fresas con cuidado de no romperlas.
En un cuenco, mezclad la leche condensada, la cucharada de fideos de chocolate y mezcladlo bien. Rellenad las fresas con la mezcla apurando hasta el borde.
Machacad las galletas. Cubrid la mitad del queso con las galletas y la otra mitad con los fideos de chocolate.
Servid y disfrutadlas :)

Today it's my birthday! So I decided that I wanted to make myself a special breakfast.
The other day there was a strawberry sale in the supermarket so, as they were fairly big and I bought a kilo I searched through the web to see what I could do with them. I saw this recipe in the internet but I immediately thought they were lacking chocolate. Therefor I introduced the chocolate vermicelli. I also thought of covering them in chocolate, but I didn't do it because it will overwhelm the strawberry flavor (but I leave it to you as an option).

INGREDIENTS (For 4)
  • 12 big strawberries
  • 100g cream cheese
  • 1 tablespoon of condensed milk
  • 4 chocolate vermicelli (one for the stuffing and the others for decorating)
  • 2 biscuits (Digestive or Graham crackers type)
Rinse the strawberries and cut the top part. With a sharp and small knife empty the heart of the strawberries being careful not to break them.
In a bowl, mix the cheese, the chocolate vermicelli tablespoon and condensed milk and mix everything. Stuff the strawberries just to the top.

Crush the biscuits. Cover half of the cheese with crumbs and the other with chocolate vermicelli.
Serve and enjoy! :)

Tomates rellenos de bulgur e hinojo / Bulgur and fennel stuffed tomatoes

Últimamente parece que me hubiese vuelto vegetariana, visto los últimos post, pero nada más lejos de la realidad. Sin embargo no está mal recordarnos, de vez en cuando, que hay muchas cosas ricas que se pueden hacer con ellos. En este caso la receta fue más fruto de los restos de la nevera que de otra cosa. Hacía mucho que no utilizaba hinojo, desde que hice la receta de hinojo gratinado. El sabor anisado que tiene me encanta y ayuda a refrescar cualquier receta, al márgen de aportar una rica textura crujiente.
Esta receta tiene la ventaja que se puede tomar tanto fría como caliente.


INGREDIENTES (Para 6 tomates)
  • 100g bulgur
  • 6 tomates rojos medianos
  • 1/2 hinojo fresco pequeño o 1/4 de hinojo mediano
  • 4 champiñones gordos
  • 1 cucharada de perejil picado
  • Sal
  • Pimienta
  • Aceite de oliva
  • Agua
Poned agua a hervir con un poco de sal, echad el bulgur y coced durante unos 15 minutos.
Mientras tanto, picad el hinojo y el champiñón en trocitos pequeños. Lavad los tomates y cortad la parte de arriba. Vaciadlos y guardad el contenido.
En una sartén, calentad tres cucharadas de aceite de oliva y sofreíd el hinojo hasta que empiece a dorarse. Añadid el champiñón y cocinad durante unos minutos junto con el contenido de los tomates. Agregad el bulgur, cuando esté hervido y cocinad durante cuatro o cinco minutos. Agregad perejil y pimienta y retirad del fuego.
Meted los tomates vacios al microondas durante un minuto (lo suficiente para que se reblandezcan un poco).
Rellenad los tomates con la mezcla de la sartén y servid. Calientes, frios o como queráis :)

Lately it seems as if I had turned vegetarian, considering my last posts, but nothing further from the truth. Anyway, it's not a bad idea reminding our selves, now and then, that many good recipes can be made without meat.
In this case, the recipe was more a collection of left overs from the fridge than other thing. It had been a long time since I didn't use fennel in a recipe, since the grilled fennel post. I love the flavor the fennel has that helps refreshing any recipe, besides it also gives a nice crunchy texture. And one great thing about it is that you can have it both hot or cold.

INGREDIENTS (For 6 tomatoes)
  • 100g bulgur
  • 6 red medium size tomatoes
  • 1/2 small fennel o 1/4 medium size fennel
  • 4 mushrooms
  • 1 tablespoon of fresh chopped parsley
  • Salt
  • Pepper
  • Olive oil
  • Water
Boil water with salt, add bulgur and let it cook for 15 minutes.
Meanwhile, chop the fennel and mushrooms in small pieces. Rinse the tomatoes, cut the top part, empty them and set aside. Keep what you carve out.
In a pan, heat three tablespoons of olive oil and fry the fennel until it starts to golden. Add the mushrooms and the carving of the tomatoes and cook for a couple of minutes. Once the bulgur is done, add it to the pan and cook it for four or five minutes. Mix in the parsley and pepper and take it out of the fire.
Heat the tomatoes in the microwave for one minute or so (enough to soften them).
Fill the tomatoes with the bulgur and fennel and serve, hot or cold, as you wish.

Acelgas rebozadas de mi abuela / My grandma's battered chard recipe

Hay recetas que en toda familia se busca heredar y alcanzar la perfección de quien las elabora, pero siempre les falta algo para ser iguales. Esta es una de esas recetas. Fascinan a toda la familia y opté por que me diese la receta para reproducirla, pero no salen exactamente iguales. Aun así, como están muy buenas y, seguramente, ninguno probaréis nunca las de mi abuela, no vais a notar la sutil diferencia que existe entre ambas.
Por otro lado es una forma de animar un poco a las acelgas, que por lo general, solemos comer hervidas y salteadas, haciendo que sean un poco tristes. Esta receta permite además complacer a todos, a los que solo les gustan las pencas y a quienes solamente se comen las hojas de las acelgas. 


INGREDIENTES (Para 4 personas)
  • 1 kg de acelgas (mejor si tienen pencas anchas)
  • 2 zanahorias
  • 1/4 cebolla
  • 1 ajo
  • 1 tomate natural grande
  • Sal
  • Harina
  • 2 o 3 huevos
  • Agua 
  • Aceite de oliva
Separad las hojas de las pencas de las acelgas y lavadlas. Colocad agua con sal en una cazuela ponedlo todo a hervir hasta que estén blandas (tanto las pencas como las hojas). Si tenéis olla podéis cocinarlas en la olla. Una vez cocinadas sacadlas a un plato y dejad que escurran el exceso de agua y se enfrien.
Haced paquetitos con las hojas, enrollándolas para que os queden como si fuesen hamburguesitas. Enharinad los paquetitos y las pencas y pasadlas por huevo. Poned a calentar un dedo de aceite y freidlas hasta que estén doradas. Colocad sobre papel absorbente.
Para la salsa, pelad y picad la cebolla, el ajo y la zanahoria. Pelad el tomate y partidlo en trocitos. En la misma sartén donde se han frito las acelgas, quitad un poco de aceite y añadid la cebolla, el ajo y la zanahoria. Freid hasta que esté dorado y agregad entonces el tomate. Sofreid ligeramente y cubrid con agua. Dejad que hierva durante unos 5 minutos. Triturad con la batidora y devolved a la sartén. Añadid las acelgas y dejad que cueza todo un ratito.

Nota: También se pueden cocer patatas y zanahorias, rebozadlas y metedlas en la misma salsa.

Some recipes are wished to be inherited by the whole family in order to achieve perfection while cooking them, but even when you get them, the result is never the same as the original. This is one of those recipes. The whole family is fascinated by it, so I decided to reproduce them, but they are not as good as my grandmother's. Albeit, as these are very good, and I am almost sure most of you will never try my grandmothers, you are not going to notice the difference between them.
On the other hand, this recipe is a nice way of making a different recipe with chard, as we mostly eat it stir fried with garlic. This recipe permits you pleasing everyone, as you can feed those who only enjoy the stems and those who prefer the leaves.

INGREDIENTS (For 4)
  • 1 kg chard (better if they have wide stems)
  • 2 carrots
  • 1/4 onion
  • 1 garlic clove
  • 1 big fresh tomato
  • Salt
  • Flour
  • 2 or 3 eggs
  • Water
  • Olive oil 
Separate the leaves from the stems and rinse them. Place water in a pot and boil them until soft (both the stems and leaves). If you have a pressure cooker you can cook them with it. Once cooked, place them in a plate, let the excess water drain and cool.
Make small packages with the leaves, rolling them, in order to make them look like small patties. Coat both the stems and leaves, first with flour and then with egg. Heat about an inch high of olive oil in a pan and fry everything until golden. Take out of the pan and place over paper towel.
For the sauce, peel and chop the onion, garlic and carrot. Peel the tomato as well and cut it into pieces. In the same pan were you've fried the chard, take out some oil and add the onion, garlic and carrot.
Fry everything until starts to become golden and the add the tomato. Fry slightly and cover with water. Let it boil for around 5 minutes. Blend everything and place it back on the pan. Add the fried chard and let it cook for a while.

Note:  You can also boil potatoes and carrots, batter them and introduce them in the same sauce.

Pak choi con ajo y jengibre / Ginger & garlic bok choi



Uno de esos productos que cada uno les llama como le da la gana, la col china o Brassica rapa chinensis. Conocida generalmente en Europa como Pak choi o Bok choi, esta col recuerda lejanamente a una acelga, por estar compuesta por un tallo casi ugual de largo que la hoja. Precisamente debido a su forma en casa se la conoce como la "comida de hipopótamo", por su semejanza a lo que comen en los documentales.
Probablemente lo más dificil de esta receta pueda ser encontrar el pak choi. Os recomiendo busquéis en tiendas de alimentación oriental.

 
 
INGREDIENTES: (Para 2)
  • 5 Pak choi
  • 2 dientes de ajo picados
  • 1/2 cucharadita de jengibre fresco rallado
  • 2 cucharadas de aceite de oliva
  • 1 cucharada de salsa de soja
  • 1/2 cucharadita de copos de guindilla
  • 1 cucharadita de semillas de sésamo tostado 

Separad las hojas de los manojos de pak choi y lavad bien las hojas y escurridlas.
En una sartén amplia colocad el aceite y calentad a fuego fuerte. Agregad el ajo picado y el jengibre y  sofreidlos. Añadid las hojas de pak choi y la salsa de soja. Removed para que todo se impregne bien. Cocinad durante 3 o 4 minutos.
Servid en una fuente, espolvoread los copos de guindilla y el sésamo tostado.

One of those products that each one calls it as they wish, we're talking about chinese cabagge or Brassica rapa chinensis. Commonly known in Europe as Pak choi or Bok choi, this cabbage distantly reminds of chard,  because it's similarity in leaf and stalk composition. Precisely because of it's shape, in my house is known as "hippopotamus food", as they say that it looks like the plants they eat in the documentaries.
Probably the most difficult part of this recipe can be finding the bok choi. I recommend you looking in a chinese or asian food store.

INGREDIENTS: (For 2)
  • 5 Bok choi
  • 2 chopped garlic cloves
  • 1/2 teaspoon of grated fresh ginger
  • 2 tablespoon of olive oil
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of red pepper flakes
  • 1 teaspoon of sesame seeds
Separate the leaves of the bunches, rinse them and let them drain the water.
In a big pad place the oil and heat it. Add the garlic and ginger and stir fry them. Mix the bok choi with the garlic and ginger in the pan and pour the soy sauce and continue mixing so it all gets an even flavour. Cook for 3 or 4 minutes. Serve in a platter, sprinkle the pepper flakes and roasted sesame.

Falafel

La primera vez que oí hablar de los falafel fue en casa de un egipcio en Madrid. Los hizo su mujer y me encantaron, asi que les pedimos la receta y durante un buen tiempo estuvimos haciendo en casa. Teniendo en cuenta que no como legumbres porque no puedo con su textura cuando están cocidas, fue un gran descubrimiento. Fui a Egipto y, después de ponerme morada, dejé de comer durante un buen tiempo. Sin embargo hace poco me volvió a entrar mono de hacer y comer, así que recuperé la receta y aquí os la dejo.

INGREDIENTES: (Para unos 15-20 falafel)

  • 500g de garbanzos en remojo (NO cocidos)
  • 2 cebollas pequeñas o 1 1/2 medianas
  • 2 dientes de ajo
  • 1 manojo de perejil fresco
  • Sal
  • Pimienta negra
  • Aceite de oliva (para freir)

El dia antes de preparar los falafel, en un cuenco grande agregar los garbanzos y cubrid con abundante agua. Cambiad el agua un par de veces a lo largo del día. Dejad que se hidraten al menos 24h. 
Una vez hidratados, eliminad el agua, colocad los garbanzos en una picadora, agregad el resto de los ingredientes y triturad. Hay que conseguir una masa en la que no queden trozos grandes de garbanzos, pero que tampoco sea una pasta, y donde esté todo bien mezclado, por lo que tendréis que abrir la picadora de vez en cuando, mezcladlo y volver a picar.
Cuando la tengáis lista, en una sartén, poned un dedo de aceite de oliva. Mientras se calienta, id haciendo bolitas que, al aplastadlas, queden de 7cm de diámetro y un par de centímetros de alto. El aceite tiene que estar bien caliente antes de que las empecéis a freir. Dorad bien por un lado, girad, y dorad bien por el otro. 
Una vez estén, sácadlas y colocadlas sobre papel absorvente.
Servid con lechuga, tomate y salsa de yogur con menta o queso untable con menta.

The first time I heard about falafel was in the house of and egiptian in Madrid. His wife made them and I instantly loved them, so we asked for the recipe and we made it at home for quite some time. Considering that I don't usually eat boiled legumes because I hate the texture, it was a great discovery. Years after that I traveled to Egypt and, after eating to much falafel, I stopped eating it for quite some time

Anyway, recently I had a compulsive need to make and eat falafel, so I recovered the recipe and I now share it with you.

INGREDIENTS: (For 15-20 falafel)
  • 500g of chickpeas soaked in water (NOT cooked)
  • 2 small onions or 1 1/2 medium size
  • 2 garlic cloves
  • 1 bunch of fresh parsley
  • Salt
  • Black pepper
  • Olive oil (for frying)

The day before making the falafel, place in a big bowl the chickpeas and cover with water. You will have to change it a couple of times as the day goes by. Let them hidrate for at least 24h.
Once the time has passed, take the water away, place them in a food processor and add the rest of the ingredients. You need to obtain a coarse dough, well mixed, but not with big pieces of chickpeas in it, so you will have to open the processor, mix, and process again.
Once the dough is ready, in a pan, place an inch of olive oil. While it heats, make balls that, once pressed down, result in a 7cm diametre and a couple of centimetres high. Oil has to be hot before frying them. Once one side is golden, turn them around and cook them well on the other side. 
When the falafel are ready, take them out of the pan and place them over kitchen paper.
You can serve them with lettuce, tomato and yogurt or cream cheese with mint.
