Alitas de pollo con salsa sriracha ligeramente picantes / Chicken wings with mild sriracha sauce

Desde siempre me han gustado las alitas de pollo. Te permite comerlas con las manos y están buenas de cualquier forma. Frititas y crujientes, con salsas, asadas con manzana y tomillo, a la barbacoa... Podría comeras a cualquier hora. De pequeña nunca hubiese optado por esta receta, por el picante, pero ahora me emociona. Lo bueno de esta receta es que te permite añadir la cantidad de Sriracha que más te guste, así que amoldadla a vuestros gustos. También podeís sustituirla por algún otro picante que os guste más.


INGREDIENTES (Para 2)
  • 6 alitas de pollo grandes
  • 3 cucharadas de ketchup
  • 1/2 cebolla
  • 2 cucharaditas de salsa Sriracha
  • 1/2 cucharadita de miel
  • 1/2 cucharadita de mostaza de Dijon
  • Harina
  • Sal
  • Pimienta
  • Aceite
  • 3 cucharadas de agua

Partid las alitas de pollo (para que sea más fácil comerlas), salpimentadlas y enharinadlas. En una sartén poned un dedo de aceite y, cuando esté caliente, meted las alitas y freid hasta que estén bien doradas. Sacad y colocadlas sobre un papel absorbente.
Mientras las alitas se frien, picad las cebolla en trocitos muy pequeños. En la misma sartén donde se han frito las alitas, quitad parte del aceite y freid la cebolla. Cuando esté frita añadid el ketchup, la miel, mostaza, Sriracha y agua. Mezclad bien todo y añadid las alitas. Removedlas hasta que esté bien impregnada la salsa por todas las alitas. 
Servid calientes.

PD: Aumentad la cantidad de Sriracha si quereis que estén más picantes.

I've always loved chicken wings. You can eat them with your hands and are gorgeous with almost everything. Fried and crispy, with different sauces, roasted with apple and thyme, BBQ... I could eat them at any time of the day. When I was small I would have never chosen this recipe, I didn't enjoy hot things, but now I love it. The good thing with this recipe is that you can change quantities of Sriracha or change it for another hot sauce.  

INGREDIENTS (For 2)
  • 6 big chicken wings
  • 3 tablespoons of ketchup
  • 1/2 onion
  • 2 Sriracha sauce
  • 1/2 teaspoon of honey
  • 1/2 teaspoon of Dijon mustard
  • Flour
  • Salt
  • Pepper
  • Oil
  • 3 tablespoons of water
Cut the chicken wings (in wing, drum and tip), add salt and pepper and cover with flour.
In a pan, add oil and heat. Once hot, add the wings and fry until golden on both sides. Take them out of the pan, once cooked, and place them on a paper towel.
While the wings are cooking, finely chop the onion. In the same pan where you have fried the wings, take out some oil and fry the onion. When golden, add ketchup, mustard, honey, Sriracha and water. Stir everything  and add the wings to glaze them.
Serve hot.
Enjoy! 
PD: Add more Sriracha if you want them spicier.

Mango a la plancha con especias / Grilled spiced mango

¡Adoro los mangos! Pero, al no vivir en una zona productora, no siempre es fácil encontrarlos buenos. Corres el riesgo de que estén poco hechos, sean demasiado fibrosos, demasiado ácidos... pero si son buenos, son deliciosos. Si están en su punto, no hace falta hacerles nada más que quitarles la piel y comérselos. Sin embargo, también están muy buenos en ensalada, batidos, con yogur, en chutney y siempre es una buena opción para sorprender en una comida. Aquí os dejo esta receta para que la disfrutéis.

 INGREDIENTES
  • 1 mango maduro
  • 1 cucharadita de azúcar
  • 2 gotas de esencia de vainilla
  • 3 pimientas rosas
  • 3 pimientas negras
  • 15 hojitas de tomillo
  • 1 cucharada de agua

Lavar el mango y partidlo por la mitad (quitando el hueso). Con un cuchillo afilado realizad una serie de cortes en cuadrícula sin que llegue a cortarse la piel (solo la pulpa).
Calentar una sartén, antiadherente, y colocar el mango por la parte de la piel. Agregad una cucharada de agua y tapar con una tapadera. Dejar durante unos 5 minutos a fuego medio. Si vieseis que se empieza a quemar la piel podéis poner un poquito más de agua.
Mientras tanto, en un mortero meclad el resto de los ingredientes y machacar hasta que se hayan mezclado bien.
Espolvorear por encima de las dos mitades de mango, dadles la vuelta, y dejad que se hagan por el otro lado. Esta vez no habrá que añadir agua puesto que lo que queremos es que se caramelicen, pero si que es interesante cubrirlo. Dependiendo de lo fuerte que esté el fuego tardará como 3 o 4 minutos.
Sacad de la sartén y apretad (por la parte de la cáscara) para servir, para que se quede combado y los trozos de mango se separen y sobresalgan.

I totally love mangoes! But, by not living in a production area, it's not always easy finding good ones. You take the risk of finding a non ripe one, a fibrous one, too acid... but if they are good, they are just delicious. If they are perfect, you don't have to make nothing to them, just peel them and eat them. Anyway, they are also great in salad, smoothies, lashi, chutney, with yogurt and, it's always a great option for a dessert. So here I leave you this recipe to enjoy.
 INGREDIENTS
  • 1 ripe mango
  • 1 teaspoon of sugar
  • 2 drops of vanilla essence
  • 3 pink peppers
  • 3 black peppers
  • 15 thyme leaves
  • 1 tablespoon of water

Wash the mango and cut it in half (take out the bone), With a sharp knife make some grid cuts, avoiding getting to the skin (just the pulp). 
Preheat a nonstick pan and once hot, place the mango on the skin side. Add a tablespoon of water and cover with a lid. Let it cook for 5 minutes to medium heat. If you see the skin starts burning you can add some extra water. 
Meanwhile, in a mortar, mix the rest of the ingredients and crush with the pestle until it's all well mixed.
Sprinkle over the mango and turn them around, letting them cook on the other side. You want them to caramelize, so this time you won't need adding water to it, but you will still have to cover it. Depending on how high your heat is it will take 3 to 4 minutes.
Take it out of the pan, press the middle part of the mango (on the skin side) in order to bend it so that the mango pieces can separate and come out.

Bao con sardina marinada en ajo y jengibre / Bao bun with marinated ginger and garlic sardine

Hace poco que se han puesto de moda los "Bao" por aquí. Para el que no sepa que es, son unos bollitos de pan cocinados al vapor que se toman en algunos países asiáticos y que pueden ir rellenos de carne. Depende del país se les llama de una forma u otra. Siempre pensé que debía ser complicado hacer el pan, pero resultó que es bastante sencillo. Simplemente es necesario tener una vaporera y un poquito de paciencia para que leve la masa. Esta receta resulta en un pan muy esponjoso (eso si, leeros bien la receta porque el agua no está entre la lista de los ingredientes). Con la mitad de la receta salen 6. 
Por lo general se ven más recetas de baos con carne que con pescado, pero éste conjuga perfectamente y le da una mezcla de texturas fantástica.


INGREDIENTES (para 6 bao rellenos)
  • 6 panes "Bao"
  • Puerro
  • Salsa Hoisin
  • Pepino
Para las sardinas:
  • 4 sardinas grandes
  • 1/2 cucharadita de jengibre fresco rallado
  • 1/2 cucharadita de ajo picado
  • 2 cucharadas de salsa de soja
  • Pimienta
Limpiar las sardinas, quitarle las espinas y las escamas y haced dos filetes. Mezclad en un plato la salsa de soja, el jengibre, pimienta y el ajo. Untad los filetes en la salsa y dejadlos macerar una hora. 
Partid el pepino y la parte verde del puerro (bien lavado y que esté tierno) en tiritas muy finas.
En la vaporera, poned los bao a que se cocinen.
Mientras se terminan de hacer, en un sartén muy caliente cocinad los filetes de sardinas vuelta y vuelta.
Abrid los bao y colocad una cucharadita de salsa hoisin, pepino, puerro y las sardinas.
No dejéis que el pan se enfrie que si no se queda chicloso.

Recently bao buns have become popular around here. For those who don't know what they are a bao bun it's a steam baked bread eaten in some Asian countries than can be, or not, stuffed with meat. The name varies to one country to another. I always thought it had to be complicated making the bread, but it turned out to be quite easy. You will just need a steamer to cook them and a bit of patience while the dough proofs. Thisa recipe results in a nice and fluffy bread (just one thing, read all the recipe before starting because the water is not listed in the ingredients). With half of it you will obtain about 6 buns. 
You usually see more bao buns stuffed with meat than fish, but this one matches perfectly and contributes with a different texture to it.

INGREDIENTS (for 6 stuffed bao)
  • 6 Bao
  • Leek
  • Hoisin sauce
  • Cucumber
For the sardines:
  • 4 big sardines
  • 1/2 teaspoon of fresh grated ginger
  • 1/2 teaspoon of finely chopped garlic
  • 2 tablespoons of soy sauce
  • Pepper
Clean the sardines, debone them and make two fillets out of them. In a dish mix the soy sauce, garlic, pepper and ginger. Dip the fillets into the mixture and let them marinate for and hour.
Cut the cucumber and the green part of the leek (use the inner layers of it) in thin strings.
Place the bao buns in the steamer until they are cooked.
While they cook, in a hot pan, place the sardines and cook them quickly on both sides.
Don't let the bun get cold, or it'll be chewy.

Tzatziki

¡Me encanta el tzatziki! De hecho fue una de las primeras que aprendí a hacer de pequeña y he seguido haciendola desde entonces. Venía en un libro de cocina para niños que editó UNICEF hace muuuchos años y me regalaron por mi cumple. La receta es muy fácil y puede tomarse como ensalada o como salsa, acompañando carnes o incluso bocadillos. El ejemplo que os dejo en la foto es de acompañamiento de una pita con cordero asado. Una forma perfecta de reutilizar cordero asado del día anterior.




INGREDIENTES
  • 1 pepino grande
  • 1 yogur griego
  • Sal
  • 1 cucharada de aceite de oliva
  • 1 diente de ajo pequeño
  • 4 hojas de menta

Lavar bien el pepino y, con ayuda del rallador de agujero más grande, ralladlo.Colocadlo en un cuenco, agregad un poco de sal y dejad reposar durante media hora. Eliminad todo el agua que suelte y escurridlo presionando con la mano. Picad el ajo y la menta en trocitos muy pequeños y agregad al cuenco junto con el aceite y yogur. Mezclad todo y servir.

I love tzatziki! In fact, it was one of the first recipes I learned as a child and have kept doing it since. It came in a book edited by UNICEF given to me as present for my birthday a looong time ago. It's a really easy recipe and you can eat it as salad, sauce or even in a sandwich. The picture that goes with this post shows it with roasted lamb and pita bread. A perfect way of using the lamb from the day before.  

INGREDIENTS
  • 1 large cucumber
  • 1 Greek yogurt
  • Salt
  • 1 tablespoon of olive oil
  • 1 small garlic clove
  • 4 mint leaves
Rinse the cucumber and, with the help of a grater with big holes, grate it. Place it in a bowl, add some salt and let it settle for half an our. Drain all the water and press the cucumber with your hand to drain the extra. Finely chop the garlic and mint and add to the bowl as well as the olive oil and Greek yogurt, Mix everything and serve.

Fideuá rápida / Quick "fideua"

En Madrid, al menos, se asocia la fideuá a un fideo gordo con un agujero que lo atraviesa longitudinalmente. En Valencia, de donde proviene la receta, la he visto hacer con todo tipo de fideo. En este caso el utilizado es uno fino que, a mi gusto, resulta menos pesado. Además, esta receta te permite tener la mayoría de los ingredientes congelados y hacerla cuando te venga antojo.Yo suelo congelar el fumet que hago después de hacer gambones a la plancha, así puedo tirar de él cuando lo necesito.


INGREDIENTES (para 2 o 3)
  • 750 ml caldo de pescado o marisco (supongo que también podríais usar caldo de pescado o marisco de brick).
  • 1 pimiento verde (tipo italiano)
  • 1 tomate rojo
  • 1/2 cebolla pequeña o 1/4 cebolla grande
  • 1 diente de ajo
  • 1 sepia
  • 100g de gambas
  • 300g de fideo del "2" o fino (NO cabellín)
  • Alioli (para acompañar)
  • Aceite de oliva
  • Sal

En una sartén grande o una paella echad aceite de oliva, para que cubra el fondo. Picad el ajo en trozos pequeños y empezad a dorad en la sartén. Cortad la sepia en trocitos y agregad al fuego. Cuando cambie el color y pierda parte del líquido que suelta, retirad a un plato. 
Picad la cebolla y el pimiento verde en trocitos muy muy pequeños. Calentad un poco más de aceite en la sartén y agregad a la sartén. Mientras se cocinan a fuego suave, pelad el tomate y cortadlo en trocitos pequeños. Cuando esté bien pochado lo de la sartén, añadid el tomate y dejad que pierda parte del agua. Una vez se evapore, desplazad la mezcla hacia un lado de la sartén y añadid los fideos a la parte contraria. Removed bien, para que se vayan tostando pero no se quemen. Cuando veáis que tienen todos un color tostado, mezclad con la mezcla de cebolla, pimiento y tomate, añadid la sepia y las gambas. Calentad el caldo y agregadlo y dejad que se cocine, a fuego medio, hasta que el fideo esté hecho (el grosor del fideo influye en el tiempo de cocción, así que dependerá de cada uno). Removed alguna vez para aseguraros que se hace homogéneamente el fideo y que no se pega al fondo.
Cuando veáis que está casi hecho el fideo, retirad el fuego, tapad con un plato limpio y dejad reposar durante unos minutos.
Servid con alioli.

In Madrid, fideuá is related to a thick vermicelli with a hole that crosses it long wise. In Valencia, where it's original from, I've seen it cooked with all types of vermicelli. In this particular case I use a thin one that, at least on my point of view, it's lighter. Moreover, this recipe allows you having all the ingredients in the freezer and make it when you whenever you want to. I usually use the shrimp's shells after I grill them, make the fumet and then store it in the freezer.

INGREDIENTS (For 2 o 3)

  • 750 ml fish or shellfish fumet (I guess you could also use a store fish stock).
  • 1 green pepper (or 1/2 bell pepper)
  • 1 red tomato
  • 1/2 small onion or 1/4 of a big one
  • 1 garlic clove
  • 1 cuttlefish
  • 100g shrimp
  • 300g fedelini or thin wheat vermicelli (preferably not capellini)
  • Aioli (to serve with the fideuá)
  • Olive oil
  • Salt
In a big pan or a paella pan pour some olive oil, enough to cover the base. Chop a garlic in small pieces and start cooking it to slow heat. Cut the cuttlefish in small pieces and add to the pan. Once it reduces some of the liquid it looses take out to a plate.
Finely chop the onion and green pepper into very small pieces. Heat a bit of oil, in the pan you've cooked the cuttlefish, and start cooking the onion and green pepper. While it cooks to low heat peel the tomato and chop it. Once you see the pepper and onion are golden, add the tomato an let it loose some water. When you see the tomato has lost liquid, move to a side of the pan the mix and add the vermicelli. Stir constantly to avoid them from burning until they all change color to a darker (yet not burnt) one. Once they've all got the same color, mix with the onion, pepper and tomato and add the cuttlefish and raw shrimps. Heat the fumet and add it to the pan. Let it cook to medium low heat until the vermicelli is cooked (it will depend on how thick it is). Stir once in a while to make sure it's all equally cooked and that it doesn't stick to the bottom.

Once you see the vermicelli is cooked, take it out of the fire, cover with a clean cloth and let it settle for some minutes. 
Serve with aioli.

Sopa de salmón / Salmon soup

¡¡HE VUELTO!!
He estado completamente desaparecida estos últimos meses liada con la tesis doctoral y ya ¡por fin soy doctora!. Ni felicitaros las navidades he hecho este año, así que nada, Felíz 2016 con retraso.
Viendo que empieza ya a entrar el frio puramente invernal he decidido que lo mejor para volver, a modo de comida reconfortante, es esta sopita de salmón.


INGREDIENTES (Para 4)
  • 1 cabeza de salmón
  • 1 patata grande
  • 1 zanahoria grande
  • 1/4 cebolla
  • Eneldo (seco o fresco)
  • Pimienta
  • Sal
  • Agua
  • Aceite de oliva
  • Harina
  • Perejil (para decorar)

En una cacerola grande se ponen un par de cucharadas de aceite de oliva, y la cabeza del salmón partida por la mitad. Se deja rehogar, a fuego suave, durante unos minutos. Mientras tanto se pelan la zanahoria y la patata y se parten en bastoncitos pequeños y finos. Se corta la cebolla en trocitos pequeños y se añaden todo a la cabeza de salmón. Añadir sal y subir el fuego para rehogar un poco las verduras y cubrir con 1 litro de agua. Si estais usando eneldo seco añadidlo ahora. Dejar hervir durante 10 minutos.
En una sartén pequeña, y a fuego suave, poned 4 cucharadas de aceite de oliva y 2 de harina. Remover bien para que no queden grumos. Con ayuda de un cazo, id añadiendo poco a poco caldo de la cazuela del salmón y continuad removiendo hasta hacer una velouté (bechamel hecha con caldo en lugar de leche). Cuando ya no tenga ningún grumo, y haya hervido un poco, agregad a la cazuela grande. Si usais eneldo fresco lo tendriais que añadir ahora.
Sacad la cabeza de salmón, extraed la carne que pueda tener, desmigadla y añadidla a la sopa. Dejad que hierva otros 10 minutos, removiendo para que no se pegue.
Servir calentito con un poco de perejil o más eneldo.

I'M BACK!! 

I've been completely disappeared this last months. I was completely busy with my Phd and I've finally made it. I'm a Phd in Art History! I didn't even find time to wish you a happy 2016.
As we are finally starting to have a cool winter I've decided that, what's more comforting than this salmon soup. 


INGREDIENTS (For 4)
  • 1 salmon head
  • 1 big potato
  • 1 big carrot
  • 1/4 onion
  • Dill (dried or fresh)
  • Pepper
  • Salt
  • Water
  • Olive oil
  • 2 tablespoon of flour
  • Parsley (to plate)
In a big pot put a couple of tablespoons of olive oil, the salmon head cut into two, and let it start cooking. Meanwhile peal the carrot and the potato and cut it into very thin julienne. Cut the onion in small pieces and add it to he salmon head. Add salt and rise the heat to cook the vegetables a bit and cover with water. If you are using dried dill you should add it now. Let it boil for 10 minutes.
In a small pan, and with medium heat, add 4 tablespoons of olive oil and 2 of flour. Stir well to avoid lumps. With the help of a ladle pour some of the soup into the flour and, when you've got a velouté (a bechamel made with stock) pour it into the soup pot.
Once it has no lumps, and it has boiled for a bit, add it to the big pot. If you are using fresh dill it will be the moment to add it.
Take the salmon head out of the pot, carve out as much salmon meat as you can, and add it to the soup. Let it boil for other 10 minutes, stirring to avoid it from sticking to the pot.
Serve hot with some parsley or dill.

Tartar de salmón con aguacate / Salmon and avocado tartare

Continuando con las recetas de pescado os dejo aquí una fresquita y que ultimamente, vayas donde vayas, está en todas las cartas de los restaurantes. Se puede preparar tanto como plato principal, poniendo un poco más por ración, como de entrante, siempre acompañado de unas tostitas de pan.

 INGREDIENTES (Para 4)
  • 400g lomo de salmon fresco
  • 2 cucharadas de cebolleta picada
  • 3 cucharadas zumo de limon
  • 1 aguacate
  • 75g salmon ahumado
  • Sal
  • Pimienta
  • 1/4 cucharadita de mostaza antigua

Quitarle la piel al salmon y las posibles espinas. Con ayuda de un cuchillo muy afilado picad en trocitos pequeños, pero reconocibles (no lo hagais puré). Colocad en un cuenco con 2 cucharadas de zumo de limón, la cebolleta, sal y pimienta. Dejad durante 15 min macerando en la nevera.
Pelad y picad el aguacate. Añadid un poco de sal y la otra cucharada de zumo de limón al aguacate. Picad el salmon ahumado.
En una fuente colocad el salmón abajo, el aguacate en medio y decorad con el salmón ahumado.
¡Listo para tomar!

Nota: Si no quereis echarle limón, es sustituible por vinagre de arroz, o alguno que no sea muy fuerte ni tenga demasiado sabor.

Continuing with the fish recipes I leave you a refreshing post in order to sum up with this really hot summer. Lately, wherever you go you will find it in every restaurant menu. You can serve it as a main course or, if you make portions a bit bigger, or a a starter, always served with toasted bread.

INGREDIENTS (For 4)
  • 400g fresh salmon loin
  • 2 tablespoons of chopped spring onion
  • 3 tablespoons of lemon juice
  • 1 avocado
  • 75g smoked salmon
  • Salt
  • Pepper
  • 1/4 teaspoon of old style mustard

Take away the salmon's skin and the bones. With the help of a sharpen knife cut into small, but recognizable,  pieces (don't over chop it). Place the pieces in a bowl with the spring onion, two tablespoons of lemon juice, salt and pepper. Place it for 15 min. in the fridge.
Peal and chop the avocado. Add some salt and the other lemon juice tablespoon to it. Chop the smoked salmon.
In a platter place the marinated salmon at the bottom, on top of it the avocado and as a final top, the somked salmon.
Ready to eat!
Note: If you don't want to put lemon you can substitute it with rice vinegar or any kind of vinegar with less flavour than wine vinegar.
