Bocados de berenjena / Eggplant bites


Entre este post y el último parece que me regalasen las berenjenas, pero es simplemente que me encantan :).  Además, pegan con casi todo y son enormemente versátiles.
Este aperitivito es fácil, bastante rápido, y se puede usar hasta de primer plato.  Así que si ahora que empieza el calor, estáis vagos y no queréis comer platos muy contundentes, os animo a prepararlo tengáis o no visitas.

INGREDIENTES: (Salen 8)
  • 1 berenjena grande
  • 2-3 lonchas de jamón serrano
  • 50-75g de cammenbert
  • 16 puntas de espárragos trigueros
  • Aceite de oliva
  • Sal
  • Miel

Se lava y pela la berenjena (podéis dejar tiras de piel para que le de más colorido). Partidla en rodajitas de aproximadamente 0.5cm . En una sartén grande se pone una cucharadita de aceite de oliva y se van haciendo las berenjenas a fuego medio con una pizca de sal.
Mientras tanto se limpian los espárragos y se pone en una sartén otra cucharadita de aceite y se cocinan, también a fuego medio.
Aprovechando que está todo cocinándose, partimos las lonchas de jamón en 4 trozos cada una y el queso en pequeñas cuñas (a las que podéis quitar la corteza blanca).
Según se vayan haciendo las berenjenas las apartaremos a un lado d ela sartén procurando que no se quemen y se mantengan calientes. Cuando estén todas hechas aprovechamos este hueco para hacer las lonchitas de jamón a la plancha (basta con 5 segundos por cada lado a fuego fuerte).
Una vez tengamos las berenjenas doradas por ambas caras y los espárragos hechos solo hay que montar. Se haces pequeños paquetitos de espárragos con el jamón. Se coloca un trozo de berenjena, el queso, se cubre con una rodaja de berenjena y se pone una gota de miel para que los espárragos y el jamón se peguen bien. Por encima se ponen unos hilos de miel más y estará listo para comer :)

This is an easy, quite quick appetizer that you can also use as a first course. So, if now than the heat is coming, you feel lazier, and you don't want to eat heavy meals, I encourage you to make it, no matter if you've got guests or you are alone.

INGREDIENTS: (Makes 8)
  • 1 big eggplant
  • 2-3 slices of Serrano ham
  • 50-75g cammenbert cheese
  • 16 green asparagus tips
  • Olive oil
  • Salt
  • Honey

Rinse and peel the eggplant (you can leave a bit of skin so it gives some colour). Cut it in 0.5cm slices. In a big pan put a teaspoon of oil and when it's hot put the eggplant slices, some salt, and let it cook to medium heat.
Meanwhile, clean the asparagus and cook them in another pan with another teaspoon of oil.
While bothe things are cooking, cut in 4 the jamón slices and the cheese in wedges (you can take away the white crust if you prefere).
As you cook the eggplant you move them to a side of the pan, making sure they don't burn but keep hot. Once everything is cooked, use the remaining space in the pan to slightly fry the ham (5 sec. each side will be ok).
When the eggplant slices and asparagus are golden, we just have to assemble it. Make small packeges with the asparagus and ham. Place a slice of eggplant, some cheese, cover with another slice of eggplant and a drop of honey to make sure the asparagus and ham don't move
Top with some theads of honey and it'll be ready to eat :)
