Atún de almadraba a la plancha con ensalada de patatas y aceitunas / Almadraba grilled tuna steak with potato and olive salad


Una de los mayores placeres del verano es poder venir a Cádiz y no solo desacansar, sino disfrutar de la gastronomía local y de los productos que el mercado ofrece. Entre estos está el atún de almadraba. Por lo general siempre le compro este atún al mismo puesto del mercado de Cádiz y el que suele vender es de la almadraba de Barbate. El precio es sustancialmente más alto que el "otro" atún que venden en el mismo puesto (del cual algún día haré un post porque para hacer guisado es delicioso), pero merece la pena si lo que uno quiere es hacerse un filetito a la plancha y comer algo suave y casi mantecoso.
Una de las cosas que seguramente aporte esta calidad a dicho atún es el hecho de no estar congelado, al márgen de la especie de túnido pescado, que es atún rojo (Thunnus thynnus), que seguramente os suene por ser la variedad más apreciada por los japoneses para hacer sashimi y sushi con él.

INGREDIENTES (Para 1 persona)
  • 1 filete de atún de almadraba (100g aprox.)
  • 1/2 diente de ajo
  • 1 cucharadita de aceite de oliva.
  • Sal
Ensalada de patatas y aceitunas:
  • 1 patata mediana
  • 4 o 5 aceitunas (usé manzanilla maceradas como "aceitunas partidas")
  • 1 cucharada de aceite de oliva virgen
  • 1 cucharadita de vinagre de Jeréz
  • 1 pizca de orégano
  • 1 pizca de tomillo
  • Sal

Preparar la ensalada primero para que la patata coja bien el sabor de las aceitunas y el aliño. Se cuece la patata y se parte en trozos pequeños (preferiblemente mientras esté aun caliente) y se pone en un recipiente con la sal, el orégano y el tomillo. Se deshuesan las aceitunas, se parten en trozos grandes y añaden a las patatas. Se agrega el vinagre y el aceite y se deja reposar.
Mientras tanto se parte el ajo en láminas finas y se pone a fuego muy suave en la sartén junto con el aceite para que se empiece a hacer. Después de un minuto, se sube el fuego a fuerte y se espera a que esté muy caliente (cuidado no se quemen los ajos). Se pone un poco de sal sobre el atún y se pone en la sartén a fuego muy fuerte (en función de si se quiere más o menos hecho el fuego debe variarse). Si se quiere que quede crudo en el centro, pero caliente, esperad 20 segundos y dadle la vuelta, esperad otros 10 segundos, retirad y servid junto con la ensalada de patatas.
No hará falta que pongais cuchillo, con el tenedor lo partireis de sobra.

One of the biggest pleasures of every summer is coming to Cadiz and not only relaxing, but enjoying the local gastronomy and the excelent products the market provides. Within these products we find the almadraba tuna. Generally I buy the Barbate almadraba tuna, because it's the one that sales the market stall I buy in. Price is significantly higher than the "other" tuna sold in the same stall (one day I'll post about this one cooked in tomatoe sauce beacuse it's delicious), but it's worthwhile if you want a tender and almost creamy tuna steak.
One of the things that probably gives this quality is the fact that it's not frozen, despite the fact of the excellent quallity red tuna (Thunnus thynnus) has, you probably know for being used by japanese for sashimi and sushi.

 
INGREDIENTS (Individual serving)
  • 1 almadraba tuna steak (100g aprox.)
  • 1/2 garlic clove
  • 1 teaspoon of olive oil
  • Salt
Potato salad with olives:
  • 1 medium size potato
  • 4 o 5 olives (I used manzanilla cultivar cured as "aceitunas partidas")
  • 1 tablespoon of olive oil
  • 1 teaspoon of Xerry vinegar
  • 1 pinch of oregano
  • 1 pinch of thyme
  • Salt

Start with the salad so that the olive and dressing flavour gets well into the potatoe. Boil the potato and cut it in small pieces (better do it while it's still hot) and put them in a bowl with salt, oregano and thyme. Debone the olives, cut them in big pieces and join them to the potatoes. Add vinegar, olive oil and let it settle.
Meanwhile cut the garlic in thin slices and start cooking them with low heat with the olive oil until it loses its hardness. After a minute or so, turn the heat up and wait until it's really hot (beware the garlic doesn't burn). Put salt over the tuna and star cooking it (depending on how cooked you want the tuna low the heat). If you enjoy it rare but hoy, wait 20 seconds once it's on the pan, turn it over, wait 10 seconds, remove from the fire and serve with the potatoe salad as side-dish.
You won't need a knife to cut it.
