Tomates rellenos fríos / Cold stuffed tomatoes


El tomate, ese fruto del que, aunque le hacemos caso durante todo el año en ensaladas, parece que siempre nos acordamos más en verano. En gazpacho, salmorejo, ensaladas de mil y un tipo, picadito como acompañamiento... es de lo más refrescante. Los tomates también se pueden rellenar de lo que a cada uno le apetezca más y existen tanto en versión veraniega como invernal. En este caso, para evitar calentar nada, vamos a hacer una receta que es completamente en frío, que se agradece en estas fechas. Además nos premitirá tenerla hecha horas antes de consumirla, por lo que la podeis hacer por la mañana e iros a la playita, montaña o trabajo, y disfrutar de ella a la vuelta bien fresquita.
En este caso las cantidades están previstas para que el tomate sea un entrante, pero las podeis aumentar si comeis mucho o si lo vais a tomar de plato principal.

INGREDIENTES (Para 6)
  • 6 tomates grandes maduros
  • 2 latas de atún en aceite
  • 6 palitos de cangrejo
  • 1 cucharadita de alcaparras
  • 1 cucharadita de cebolla picada
  • 1 pimiento de piquillo
  • 1 cucharada de mayonesa
  • 1 cucharada de tomate frito
  • 1 cucharadita de kétchup
  • ½ diente de ajo
  •  Sal
  • Pan duro
  • Aceite de oliva
  • Vinagre de Jeréz
Lavad los tomates y secadlos bien. Se corta la parte superior del tomate y se vacía con un sacabolas (se puede hacer con una cucharita si no se tiene sacabolas). El interior de los tomates se pone en un vaso de batidora para el salmorejo. Salad los tomates ligeramente y meted a la nevera.
En una picadora se pone el palito de cangrejo, el atún, la mayonesa, la cebolla, el kétchup, el pimiento, las alcaparras y el tomate frito. Se pica bien, sin que llegue a ser una pasta sin textura.  Rellenad con esta pasta los tomates.
En el vaso de la batidora agregar una rodaja de 3 dedos de pan (de barra) y esperad a que empape. Agregar el ajo, 1 cucharada de vinagre, un poco de sal y 2 cucharadas de aceite de oliva y batir con la batidora hasta que emulsione. Colar y servir en la misma fuente de los tomates.

Tomatoes, that fruit of which, although we profit al year long in saladas, we mostly tend to remember in summer.  "Gazpacho", "salmorejo", a thousand and one salad kinds, chopped as a side dish... it's so refreshing. Tomatoes can also be stuffed with whatever each one preffers and there are summer and winter recipes for this.
In this case, to avoid heat, we are going to prepare a recipe that's compleatly cold, something that's appreciated this time of the year. It will also let us make it advance, so you can go to the beach, to hike or to work and enjoy it when you get back home.
In this case the recipe is thought as  an appetizer but you can increase quantities if you eat a lot or you want to serve it as a main course.

INGREDIENTS (For  6)
  • 6 tomatoes
  • 2 cans of tuna
  • 6 crab sticks
  • 1 teaspoon capers
  • 1 piquillo pepper  
  • 1 tablespoon mayonaise
  • 1 tablespoon tomatoe sauce
  • 1 teaspoon ketchup
  • ½ garlic clove
  • Salt
  • Stale bread 
  • Olive oil
  • Xerry vinegar
Clean the tomatoes and dry them well. Cut the top part and empty them with a melon baller (if you haven’t got one you can use a teaspoon). Put the center of the tomatoes in a hand blender vase or a blander, you will use it for the Salmorejo. Put a pinch of salt inside each tomatoe.
In a blender put the crab sticks, tuna, mayonaise, ketchup, onion, pepper, capers and tomato sauce. Blend, bewaring not to make a paste without texture. Fill in the tomatoes.
In the hand blender vase or regular blender add a slice of stale bread (about 4 cm) and wait for it to soak. Add the garlic, vinegar, salt, two tablespoons of olive oil and blend until emulsified. 
Strain and serve in the same platter as the tomatoes.

Chupitos de patata con queso y cebolla / Potato shots with cheese and onion


Tenía tantas ganas de usar mis chupitos para hacer un aperitivo salado que cuando decidí hacer la cena, antes de ver que comida iba a poner de plato principal, tenía claro que tenía que hacer algo con ellos. Había pensado poner unos montaditos de queso de cabra con cebolla, pero pensé que si le cambiaba el formato podía ser el relleno perfecto de mis vasitos de chupito inclinados.

INGREDIENTES (Para 8 chupitos)
2 patatas medianas
1 ½ rodajas de rulo de cabra (grande)
1 cucharada de mantequilla
2 cucharadas de leche
Pimienta
Sal
Cebolla caramelizada

Coced las patatas hasta que estén blandas y dejar enfriar hasta que se puedan pelar. Se parten en trocitos y con la batidora junto con la mantequilla y la leche hasta que quede un puré fino y cremoso.
Se quitan los bordes del queso de cabra y se parten las rodajas en seis trozos. Los bordes se pueden añadir picaditos al puré para que tenga más sabor a queso.
Para montarlo en los chupitos se mete el puré en una manga pastelera o en una bolsa de bocadillos y se corta una esquina para rellenar los vasitos. Encima se coloca un trocito de queso de cabra y se termina con la cebolla caramelizada.
Es recomendable tomarlo templado para que todo tenga una textura correcta.

I wanted so much to use my shot glasses in an appetiser that when I decided to invite my friends to dinner, way before knowing which was going to be the main course, I already knew I wanted to do something with them. I had thought of some toasts with goat cheese and onion, but I considered that it could be the perfect filling for my shots.

INGREDIENTS (For 8 shots)
2 medium size potatoes
1 ½ goat cheese
1 tablespoon butter
2 tablespoons milk
Pepper
Salt
Caramelized onion

Boil the potatoes until soft and let them cool before peeling them. Cut them into pieces and, with a blender mix them with the butter, pepper, salt and milk until you obtain a creamy texture.
Cut the borders of the cheese and cut the slices in six. You can put the borders into the mashed potatoes in order to give them more cheese flavor.
Put the mashed potatoes in the bottom of the shots using a piping bag or a sandwich bag, cutting a corner to fill in the shots. Place on top a piece of goat cheese and finally top with caramelized onion.
As to obtain a correct texture better serve warm.

Cebolla caramelizada / Caramelized onion

Ultimamente está muy de moda en bares y restaurantes que las cosas lleven cebolla confitada o caramelizada. Yo, como gran fan de la cebolla que soy, soy una gran consumidora de este tipo de platos. Pero tiende a haber una gran pregunta entre la mayoría de los consumidores de los mismos ¿Cual es la diferencia entre cebolla caramelizada y confitada? Pues la cebolla caramelizada se hace con azúcar resultando una especie de mermelada. Por el contrario, la cebolla confitada consiste en confitar la cebolla, esto es, ponerla en un recipiente con mucho aceite a baja temperatura y dejar que se cocine. Aquí os dejo las cantidades que suelo usar yo para caramelizar. Para cómo confitar cebolla mirad aquí, que ya lo expliqué.

INGREDIENTES
2 cebollas medianas
2 cucharadas de azúcar moreno
2 cucharadas de vinagre de vino blanco
2 cucharadas de aceite
Sal

Se parten las cebollas en juliana y se ponen a sofreír con el aceite en una sartén. Cuando estén pochadas y con un poquito de color se añade el azúcar y una pizca de sal y se deja hasta que el caramelo esté bastante reducido, aproximadamente unos 10 minutos a fuego lento. Cuando esté la cebolla se añade el vinagre y se retira del fuego.

Lately you can find in many restaurants and bars products with caramelized onions or onon confit. As a great onion fan I am a usual consumer of this type of dishes. But the general question asked between consumers ir ¿which is the difference between onon confit and caramelized onion? Well, caramelized onion needs sugar and the result is a kind of jam. On the other hand, onion confit is made by cooking onions in a lot of oil at a low temperature.
I use the following quantities to make caramelized onion. Whereas for the onion confit you can see the recipe here.

INGREDIENTS
2 medium size onions
2 tablespoons brown sugar
2 tablespoons white wine vinegar
2 tablespoons olive oil
Salt
Cut the onions longwise and fry them with the oil in a pan. When starting to get golden, add sugar and a pinch of salt and let the caramel reduce (aprox. 10 minutes low heat). When the onion is cooked, add the vinegar and set aside.

Pollo relleno de gorgonzola empanado en cacahuete con salsa de frambuesas / Gorgonzola stuffed chicken with peanut crust and raspberry sauce



Ya os hablé en uno de los primeros posts que colgué que me presenté a un concurso de gastronomía y me dieron un premio.  Al año siguiente me volví a presentar. En este caso la receta elegida fue esta, Sorpresa crocante de frambuesa, y aunque llegué a la final, me quedé ahí. Eso no significa que por ello esta receta deje de estar buena. Aunque la mezcla de sabores pueda parecer un poco extraña, os recomiendo (como siempre) que lo probeis, porque no queda nada chocante, siempre que os gusten los quesos fuertes. Además, al margen de lo largo que es el nombre de la receta, se tarda muy poco en hacer.

INGREDIENTES: (para 4 personas)
  • 2 pechugas de pollo partidas en 4 filetes cada una
  • 200g de cacahuetes tostados
  • 1 huevo
  • Harina
  • 200g de gorgonzola
  • Pimienta
  • Sal
  • Aceite de oliva
      Salsa:
    • 100g de frambuesas
    • 25g de azúcar blanca
    • 1 cucharada de vinagre de Módena
       Se puede acompañar con:
    • Hojas de espinacas frescas
    • 2 o 3 tomates
    • Frambuesas
Antes de poneros a rellenar el pollo teneis que pelar los cacahuetes tostados y triturarlos bien, pero evitando que quede excesivamente fino el polvo de cacahuete. Esto lo podeis hacer con mortero o con picadora, en función de el ejercicio que esteis dispuestos a hacer.
Por otro lado, salpimentad las pechugas de pollo  y colocad 2 cucharadas soperas de queso gorgonzola sobre uno de los filetes de pechuga y cubrir con otro. Enharinad las pechugas rellenas, pasadlas por huevo y finalmente por el cacahuete molido, con cuidado de que no se abran. Freidlas en abundante aceite a fuego suave, para evitar que el cacahuete antes de que se llegue a hace el pollo. Dad la vuelta al pollo para que se fría por el otro lado y sacadlo a un papel secante para dejarlo escurrir.

Salsa de frambuesas:
Se lavan bien las frambuesas y se colocan con el azúcar en un cazo, a fuego medio. Dejadlas cocer hasta que se deshagan del todo y al retirar del fuego agregadle el vinagre de Módena. Para evitar que queden pepitas, pasad la salsa por un colador de malla o un chino.

Como acompañamiento podeis poner unas hojas de espinacas y tomate. En vez de poner la clásica rodaja de tomate coged los tomates y sacadles las semillas. Las poneis en un cuenco y las aliñaís con un poco de aceite vinagre.

I've already told you about the cooking contest I participated in and won a prize. The next year I tried again with a recipe called "Crunchy raspberry surprise". Although I managed to the final, this time I didn't get further than that. This doesn't mean it's a bad recipe, I swear it's good. Therefore, although the flavour mixture may seem a bit strange, as I always do, I recomend you trying it.  Specially to those who enjoy strong cheeses.
By the way, albeit the long name, it's a very fast recipe.

INGREDIENTS: (For 4)
  • 2 chicken breasts (each sliced into 4)
  • 200g roasted peanuts
  • 1 egg
  • Flour
  • 200g gorgonzola
  • Pepper
  • Salt
  • Olive oil
      Sauce:
    • 100g raspberries
    • 25g caster sugar
    • 1 tablespoon of Modena vinegar
       Side it with:
    • Fresh spinach
    • 2 o 3 tomatoes
    • Raspberries
Before stuffing the chicken you should start by pealing the roasted peanuts and chopping them, try not to make them too small as if it was peanut dust. You can eather hand chop them or put them into the mincer, it depends on how much exercise you want to do.
Once you've got this, put salt and pepper on the chicken and place 2 tablespoons of gorgonzola in the middle of one of the chicken brest slices and cover it with another one.
Flour the stuffed chicken, put them in the beaten egg and cover them with the chopped peanuts. Be careful they don't open. Deep fry them in olive oil with medium heat in order to cook the chicken and make sure you don't burn the peanuts. Flip and cook the other side until golden. When you take it out of the pan leave it over kitchen paper before serving.

Raspberry sauce:
Wash the raspberries and put them in a pan with the sugar. Let them cook to medium heat until you've got a puree. Take the pan out of the fire and add the Modena vinegar. Pass through a sieve to avoid having the raspberries seeds.

As a side you can set some spinach leaves and tomato. Rather than the usual tomato slice you can use the tomato seeds. Dress them with olive and vinegar and place them in the dish.

Croquetas de merluza / Hake croquettes

Conozco a poquísima gente a quien no le gusten las croquetas.  En mayor o menor medida, a todos nos proponen una ración de croquetas y decimos que sí. El mercado está plagado de croquetas congeladas, de todo tipo y relleno, pero siempre primando las clásicas de jamón. En la mayoría de los bares podemos encontrar croquetas, bien como ración, bien por unidades, y cada día de sabores más curiosos. Sin embargo no todo el mundo se anima a hacerlas en casa. Algunos alegan que les salen demasiado blandas y les revientan en la sartén, y otros directamente que no saben hacer una bechamel. ¡Eso no me vale como escusa! Si es que pueden tener alguna pega es simplemente el hecho de que hay que hacerlas con tiempo ya que, antes de rebozarlas, hay que esperar a que la masa esté bien fría.

Esta vez el reciclaje consiste en aprovechar las cabezas de merluza que habíamos usado para hacer un fumet de pescado en casa. En este caso es merluza, pero se pueden hacer croquetas con cualquier pescado que os haya sobrado. Partiendo de la base que esta merluza ya está cocida, el resto de la receta es más o menos la básica.

INGREDIENTES: (Para unas 20 croquetas medianas)
50g mantequilla
2 cucharadas soperas de harina
2 vasos de leche (aproximadamente)
4 cabezas de merluza
1 diente de ajo
Perejil
Pimienta
Sal
Pan rallado
1 huevo
Aceite (para freir)

Antes de empezar a hacer la bechamel, hay que sacar la carne de las 4 cabezas de merluza. Tened mucho cuidado con que no queden espinas, porque nadie se las esperará en las croquetas, así que desmenuzadla bien para que no se os pase ninguna.

Cuando ya tengamos esto, en una sartén ponemos la mantequilla y esperamos a que se funda bien. Antes de añadir las cucharadas de harina picamos el diente de ajo y lo añadimos para que se sofría un poquito. Removed bien la harina con la mantequilla para que se cocine y no sepan las croquetas a harina cruda y, poco a poco. se añade la leche. Más o menos será de medio vaso en medio vaso, sin dejad de remover y deshaciendo los grumos mientras tanto. Cuando veais que la bechamel está más o menos densa, añadid el perejil picado (va un poco en cuestión de gustos, pero tampoco le pongais demasiado), la sal, la pimienta y la carne de la merluza. Unificadlo bien con la bechamel y cuando veais que la masa se empieza a despegar de la sartén, ese será el momento de retirarla del fuego.

Volcad la masa en un plato y esperad hasta que esté bien fría. Esto llevará como medio día, por lo que si haceis la masa por la noche será mejor.

Formad las croquetas con las manos (más o menos grandes en función de como os gusten). Batid el huevo y pasadlas primero por huevo y después por el pan rallado. Poned 2 dedos de aceite en  la sarten y freirlas en aceite caliente. Al sacarlas, ponedlas en papel absorvente antes de colocarlas en el plato para servir. Hay que comérselas mientras estén aun calentitas.

También se pueden congelar antes de freirlas. En este caso se introducen en la sarten con el aceite caliente y se baja a temperatura media durante la fritura. No hace falta descongelarlas previamente.

I know almost no one that doesn't like croquettes. To a greater or lesser extent we all accept croquettes if they are served to us. The market is full of frozen croquettes, with all types of filling, but the main ones are always the "jamón" ones. (Note for english readers, croquettes in Spain are called croquetas and are always made with a béchamel batter and the most popular ones have cured ham). Almost any bar serves croquettes, eather individual or dishes, and each day you can find stranger flavours. However, not everybody is encouraged to make them at home. Some say that's because the batter they make is too soft and the explode in the pan, others directly allege that they don't know hao to make béchamel. That's no excuse! The only drawback croquettes may have is that you have to make the batter the day before as you need it to be really cold before you coat them with bread crumbs.

This time the recycling consists in using hake heads that we previously used in a fish stock. In this case I've used hake, but you can use whichever fish leftover you've got. As the fish is already cooked, the recipe is almost the regular one for croquettes.

INGREDIENTS: (For about 20 medium size croquettes)
50g butter
2 tablespoons of flour
2 glases of milk (aprox.)
4 hake heads
1 garlic clove
Parsley
Pepper
Salt
Bread crumbs
1 egg
Oil (for frying)

Before starting with the béchamel, you've got to take the meat out of the hake heads. Be aware of the possible bones you mis, as no one will expect them in the croquettes.

Once you've got this step done, melt the butter in a pan and add the garlic clove well chopped. Once it becomes golden add the flour and stir a couple of times to make sure it's cooked, if not the croquettes will have an uncooked flour flavour. Pour the milk, more or less half a glass at a time and stir to make sure you've got no lumps. Once you see the béchamel is more or less dense, add the chopped parsley (add as many as you like but remember we are making hake croquettes), salt, pepper and the hake meat. Unify everything and once you see the batter starts to detach from the pan put it in a plate and let il cool.  Once it's cool,  introduce it in the fridge. It takes about half a day to cool so it's better if you make it at night.

Shape the croquettes (size will depende on how you like them most). Beat the egg and introduce them firstly in the egg and them coat them with the bread crumbs.
In a pan heat 3cm of oil and fry the croquettes when it's hot. Before serving them place the croquettes over kitchen paper. Eat them while they are still hot.

You can also freeze them before frying them. In this case, when frying, low to medium temperature the oil once you've introduced them. You won't need to defrost them.

Tarta de queso y yogur con copos de chocolate/ Yogurt-cheesecake with chocolate flakes


Tarta de queso sin horno... llevaba taaaaaaaaanto tiempo persiguiendo hacer esta receta. El único inconveniente, que nunca tenía por casa queso de untar cuando me entraba el mono.

Por fin el otro día conseguí hacerme con todos los ingredientes y en ese momento me entró la gran duda. ¿La acompaño con la típica mermelada de frutos rojos? No, demasiado típica. ¿Y si hago un toffee y la cubro? Esa era  una firme candidata, pero luego pensé en que quedaría demasiado pesada (algún día la haré pero en versión pequeñita). Pues nada, un remolino de chocolate en el interior y luego la espolvoreo con un poquito más y listo.

Segundo problema, la mayoría de las recetas que consulté llevaban nata líquida, pero eso tiene otra gran pega, que hacen que te comas un trocito y parezca que te has comido 2 quesos enteros. Así que cambié y reduje la cantidad de nata y la sustituí con yogur, lo que hace que salga más ligera.
INGREDIENTES
  • 250g yogur natural
  • 375g queso de untar
  • 50g leche condensada
  • 40g azúcar
  • 4g de gelatina
  • 10 galletas tipo Digestive
  • 3 cucharadas de leche
  • 50g de mantequilla (aproximadamente porque dependerá de la absorción de las galletas)
  • Chocolate de cobertura
Se sumergen las láminas de gelatina en agua fria y se espera a que se reblandezcan.
Mientras tanto, en un cuenco grande se mezcla el queso, los yogures, la leche condensada y el azúcar y se bate con las varillas de la batidora hasta conseguir una mezcla cremosa y ligera. Se calienta la leche y se agregan las láminas de gelatina reblandecidas y bien escurridas y disuelven en la leche caliente. Esto se añade a la mezcla de los otros ingredientes y se bate durante un par de minutos a velocidad media-fuerte para que se integren bien.

Una vez tenemos el relleno hecho, metemos las galletas en la picadora y las reducimos a polvo de galleta. Si no teneis picadora, metedlas en una bolsa y pasarles el rodillo por encima hasta que estén hechas polvo (literalmente). Una vez tengais el polvo de galleta, se funde la mantequilla en el microondas y se añade, poco a poco, a las galletas. Mezclad bien todo, procurando que las galletas puedan pegarse pero no tengan demasiada grasa. Esto será lo primero que pondreis en el molde en el que vayais a hacer la tarta.

El molde tiene que tener una altura de 4cm mínimo, y el diámetro dependerá del grosor que busqueis. También se puede hacer en formato de tartaletas pequeñas (como la de la foto), para lo que tendreis que tener en cuenta que el espesor de la galleta tendrá que ser menor al que se pone en una tarta.

Se vuelca la galleta y se aplasta con una cuchara hasta que se compacte un poco y cubra toda la base de la tarta. Encima se añade la masa de queso y yogur. Se funde un poco de chocolate al que le pondremos un pelín de leche y se ponen unos hilos sobre la tarta. Los mezclamos haciendo dibujos y dejamos enfriar la tarta 8 horas.

Una vez la desmoldemos, raspad la tableta de chocolate de cobertura con un cuchillo para crear escamas de chocolate para cubrir la tarta.

Ovenless cheesecake... I wanted to make this recipe for soooooooooooooooooooo long. The only inconvenient was that I never had cream cheese at home each time I wanted to make it.

Finally, the other day I managed to get together all the ingredients and, just before I started I had a huge dilemma. Should I cover it with the typical wild berry topping ? No, too typical. What about a toffee topping? That was a strong candidate until I thought it could be too sweet (someday I'll make a small one). Ok, then the best option was a chocolate swirl and some chocolate flakes over it.

I also found another problem. Most of the recipes used cream, so when you eat a small piece of cake it's so heavy that it seams you've eaten two whole cheeses. So I decided to substitute cream for yogurt, what makes it much lighter.
INGREDIENTS
  • 250g plain yogurt
  • 375g cream cheese
  • 50g condensed milk
  • 40g sugar
  • 4g gelatine
  • 10 biscuits (Digestive type)
  • 3 tablespoons of milk
  • 50g butter (aprox. because it will depend on the biscuit absorption)
  • Chocolate
Soak the gelatine leafs in cold water and wait until they become soft.
Meanwhile, in a big bowl wisk the cheese, yogurt, condensed milk and sugar and beat until soft and creamy. At the same time, heat the milk and add the gelatine, disolve them and add to the cheese mixture. Beat for a couple of minutes until it's fluffy and the ingredients are well mixed.

Once the filling is prepared, crash the biscuits until you obtain  very small crumbs. You can rather put them in a mincer or hand make them by putting the biscuits in a bag and crushing them with the rolling pin. When you've got the biscuits crumbs ready, soften the butter in the microwave and, once liquid, add it slowly to the crumbs. Mix together well, and make sure that the crumbs don't become too greasy. This will be the crust to your cake, so it's the first thing you will have to put into the tin that must be at least 4cm high. Diameter will depend on the thickness searched. You can also make small cakes (like the one in the picture), but you must consider that the biscuit crumbs height has to be less than the one in the cake tin.

Press the crumbs with a spoon to compact them and make sure it covers the whole base. Top with the cheese ans yogurt batter. Melt some chocolate with a bit of milk and add some threads over the cake. Mix them with the batter with a knife making some swirls and let the cake cool for 8 hours.
Once we take it out of the tin, with a sharpen knife,  push the blade over the chocolate surface to make the flakes that will cover the cake.

Tarta de cerezas y merengue / Cherry and meringue tart


 
Lo sé, esto requiere horno. Supongo que el fresquito de estos días me ha hecho dejarme llevar pero, no vamos a desperdiciar que se pase la temporada de cerezas y picotas sin hacer esta tarta. ¡No os lo podeis permitir! Es una tartaleta muy ligera, puesto que lo único más denso es la tartaleta en sí y, al hacerlo con cerezas frescas, no es extremadamente dulce.
La base de la tartaleta (de pâte sucrée) es la misma que la de la Tartaleta de chocolate negro, así que si alguno ya os habeis animado a hacer la otra sabreís que no implica mucha dificultad.
INGREDIENTES:
  • Tartaleta de Pâte sucrée
    • 3 yemas de huevo
    • 90g de mantequilla
    • 60g azúcar
    • 215g de harina
    • 1 pizca de sal
  • Merengue
    • 3 claras de huevo
    • 35 ml de agua
    • 110g y 30 g de azúcar
  • 1 kg de cerezas
  • 2 cucharadas de azúcar

Se elabora la tartaleta, siguiendo los pasos que aparecen en Tartaleta de chocolate negro, se hornea y se deja templar.
Mientras la tartaleta está en el horno aprovecharemos para deshuesar las cerezas y dejarlas en un recipiente con las 2 cucharadas de azúcar para que suelten algo de jugo (si se le quiere poner una cucharadita de canela sería en este paso).
Para hacer un merengue italiano tendremos que poner en un cacito los 110g de azúcar y los 35ml de agua y dejar hervir hasta que adquiera punto de bola o 121º (para esto es interesante tener un termómetro de cocina digital). Al tiempo que esto está en el fuego se montan las claras con los 30g de azúcar y una vez lo del cazo haya adquirido la temperatura, se vierte poco a poco en el recipiente de las claras sin dejar de batir hasta que tenga una textura esponjosa.
Una vez tengamos el merengue y la tartaleta hechos, se monta la tarta y se mete al horno hasta que el merengue tome un color dorado.

I know, this recipe requires oven. I supose that the lower temperatures of the last week have taken me into the oven world again but, it's also to take into consideration that we can't let the cherry season pass without making this recipe. It just can't happen! It's a very light tart, as the thickest part is the crust and, as we are using fresh cherries, it's not too sweet.
For the crust I'm using the pâte sucrée recipe I've already used in the Dark chocolate tart post, so if you've already tried making it you will know it's not that difficult.
INGREDIENTS:
  • Pâte sucrée tart
    • 3 egg yolks
    • 90g butter
    • 60g sugar
    • 215g flour
    • A pinch of salt

  • Meringue
    • 3 egg whites
    • 35 ml water
    • 110g y 30 g caster sugar
  • 1 kg cherries
  • 2 tablespoons of sugar
  • Cinnamon (optional)
Make the tart crust following the steps that appear in the Dark chocolate tart recipe, bake and let it cool.
While the crust is in the oven we'll debone the cherries and let them in a bowl with a couple spoons of sugar until they produce some juice (if you are considering the cinnamon option, this is the moment).
For the italian meringue we'll put the 110g of sugar and the 35ml of water un a small saucepan and let it boil until it looks like a thick transparent syrup or reaches 121º C (it's ideal having a digital cooking thermometer). Meanwhile, in a bowl, you beat the egg whites with the remaining sugar (30g) and once it's almost done you slowly join in the thick syrup. You must continue beating until you achieve a stiff texture.
Once we've got the meringue ready and the crust slightly cooled, you just have to put the meringue into the crust, top with the cherries and bake until golden.
