Empanadillas de morcilla y manzana/ Black pudding and apple turnovers

Black pudding is one of those products that you can find almost everywhere, well, at least on those countries where eating pork is well looked upon.  If you search for it in wikipedia you'll see that almost every continent, except for Africa, has its own.
You've got the typical fried one, with scrambled eggs and red pepper, roasted, BBQ'ed... but this version makes easier eating it as the individual portions are perfect for a small buffet or an informal appetizer where no cutlery will be needed.

INGREDIENTS (For 16 pies)
  • 1 package of La Cocinera "empanadillas" dough (16 circles) or 16 circles of puff-pastry dough
  • 2 apples
  • 2 tablespoon of sugar
  • 1 teaspoon of cinnamon
  • 64 pine nuts
  • 2 rice black puddings
  • 1/2 teaspoon of lemon juice
  • Olive oil
  • 1 glass of water
Put a couple of tablespoons of olive oil in a pan, peal the balck puddings, cut them in thin slices and fry them (high heat). With a wooden spoon make the puddings crumbs and take them out of the fire once cooked. Let them cool down.
Peal the apples, cut them into cubes and place them in a saucepan to medium heat. Once slightly golden add sugar. Let it caramelize and once caramel has a golden colour add the lemon juice and water. Let it boil until the apple is soft, take it out of the heat and mash it using a potatoe masher (you can also squash them with a fork).
Take a disk of dough, place a teaspoon of black pudding and another of apple. Put 4 pine nuts in each pie, fold the dough in half and close with a fork. Repeat with all the pies.
Preheat the oven to 180º. Grease the oven pan with some oil, arrange the pies over it and spread some more oil over them. Bake until golden (you can also fry them but the result is greasier) and take them out into a cooling rack.
Wait a bit before eating them as the apple keeps the heat for a long time.

Cambios y Pan de alcaparras con queso y cebolla / Changes and Caper bread with cheese and onions

I know, maybe I haven't been long enough around the blogger world to star changing looks so soon, but I've been long time looking for a new banner. By the way I take advantage of it and inaugurate a new section, FROM BLOG TO BLOG.

The idea is connecting this blog to non food blogs and make new recipes that can be related to the content of each of them. This doesn't mean that if in some particular moment I'm proposed by another food-blog writing a "From blog to blog" post I'm gonna deny it.
To begin with this section I rely on my friend, illustrator, blogger and creator of the new banner, Ken Niimura. (http://niimurablog.blogspot.com/). He is also the creator of my profile picture. If you've got any doubts about what the hell it is, is a caper. That tiny and delicious pickle bud that some love and others can't stand.
Therefore we're gonna make a recipe thatthe gourmet side of Ken  will surely enjoy if he was to be around here :). A recipe that his "lazy kid" won't be able to make because of the job it requires, but he would certanly enjoy it. If you want to have a laugh, flip over some illustrations, read about comic news... I seriously recommend you to drop by this amusing blog.

INGREDIENTS:
  • 200g strong flour
  • 125ml water (room temperature)
  • 1 spoon of chopped capers
  • 6g fresh yeast
  • Filling
    • 125g cream cheese
    • 50 grated emmental
    • 1/4 medium size onion
    • Black pepper
Mix the yeast with water and some spoons of flour (5 or 6), stir until it's creamy and let it settle for 15 minutes (until it has bubbles on surface).  In a bowl put the flour (make a volcano with it). Once the yeast mix is ready pour it in the bowl along with the capers (dried and chopped) and knead until the dough is solid and it doesn't stick to your hands (knead for 5 to 7 minutes thoroughly). Make small balls of dough and place them over a non sticky pan. Cover it with a cloth and let the dough rise in a warm place (between an hour and a half and two, depending on the places conditions). Once ready, heat the oven to 270º and bake until the crust is golden (don't worry if the crumb is not well cooked as you will take it away and substitute with the cheese filling). Take the small buns out of the oven, and let them cool slightly.
In another bowl mix the cheeses, pepper and finelly chopped onion. Open the buns, take out the crumb (be careful they might be still hot), stuff them  with the cheese mix and put them back into the oven until they are golden. You'll have them ready to eat :)

Bavarois de café soluble y chocolate / Chocolate and instant coffee bavarois

I've been willing to reproduce this recipe, that came to me after a dessert party, for quite a long time. Yes, for those that have never attended one a dessert party is exactly what it sounds like, a party where you exclusively eat desserts. In case someone invites you to one I've got a couple of reccomendations for you: 1º if you are getting toghether more than five people, one or two guests should rather take something to drink and 2º take a tupper ware with you. My friend Alexia, who doesn't consider herself a good cook, was the one in charge of cooking this dessert, which ressult turn out to be considered outstanding by everyone of us.
I must confess that I'm not a coffee lover.  I only like coffee in sweet things but you'll never see me drinking a cup of coffee. Althogh the original recipe was a great one, I've decided to give it my special touch by adding chocolate to it. I'm a real chocaholic!
Well, I leave you with this easy peasy recipe that will make you look like an expert cook :)

INGREDIENTS (Serves 6)
500ml  liquid cream
3 teaspoons of instant coffee
3 tablespoons of cocoa powder
22g of instant flan powder (I use the brand Royal but I asume it's not easy to find outside Spain)
Liquid caramel (for the pan)

Pour the caramel in the pan you are using to give shape to your bavarois.
Heat 250ml of cream in a small saucepan and when it's compleatly liquid add the instant coffee and 11g of instant powder flan. Wait until it boils, stirring now and then, and once it boils pour it in the pan. Once it starts to cool (about 15minutes) you can continue to the next step.
Repeat the cream heating process with the spare cream. After it reaches some temperature put some un a cup and mix with the cocoa powder in order to make it lump-free. Pour the content of the cup in the saucepan, add the rest of the instant flan powder and stir until it boils.
Let it cool before refrigerating and cool for 3 hours and it will be ready to eat :)

_______________________________________________________________

I've heard through the grapevine that autumn is coming but I still can't figure out why everyne is saying that, considering the high temperatures we are still having. As sandals fan as I am I am willing to turn on my oven without dying in the heat.
While the warm weather decides to move away and while I long in front of my oven until it gets cooler, I leave you with a recipe that had a quite good acceptance last year within those who tasted it, and that left some of them disconcerted with what was that flavour they weren't able to recognise.
The recipe is  based on the Simply Recipes Peanut Butter cookies, although the butter quantities have been changed in order to give them more peanut flavour.

INGREDIENTS:
  • 115g sugar
  • 100g brown sugar
  • 100g butter (room temperature)
  • 150g peanut butter (better if chunky)
  • 160g flour
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 egg
In a large bowl soften the butter, add both sugars and whisk (better if you use and electric egg beater). Once creamy, add the peanut butter and the egg and continue beating until it becomes creamy again. In a different bowl mix the dry ingredients (flour, baking powder, baking soda and salt) and add to the butter mix.
Divide the dough in half, make 2 cylinders with a diametre of 5 or 6cm each and freeze for about an hour.
Preheat the oven to 190ºC/ 375F (for crispy cookies) or 140ºC/300ºF (for chewy cookies). While it heats, unfreeze the dough, slice it into 1cm thick slices and place them over an ungreased cookie sheet (the best option is using a silpat if you've got one). Press them twince with a folk (as if making a cross). Leave 4cm between cookies and bake them until golden (10 minutes for crispy and 15 for chewy).
Let them cool before transfering them to the rack to cool compleatly. Try resisting them!

I've never been a great rice pudding fan. It's not that I don't like it, it's simply that there was something that just didn't convince me until I discovered what it was, its texture. That's why I decided tu turn it into a flan. I love creamy seafood rice, but there's something in the sweet one that I just don't  love. My family has always been a huge rice pudding fan and they ask for it no matter which restaurant we go to and they usually compare one with another and to whatever they have ranked number one on their list.
Undoubtedly this recipe has been adapted to match my taste, though initially was intended to be a rice foam, it came out like this and I liked the variation. If you are a rice pudding lover  I recommend you make half the glass with regular rice pudding and the other half with rice pudding flan. This way you'll get a great texture contrast.

INGREDIENTS: (for 4 flans)
3/4 cup of rice
1 1/2 cup of water
2 tablespoons of sugar
3 cups of milk
Half a cinnamon stick
1 teaspoon of grounded cinnamon
1 lemon peel
2 gelatine sheets (1.2g)

Rinse the rice to eliminate the excess of starch. Put the water in a saucepan and make it boil, put the rice in. Once the water is consumed add the lemmon peel, cinamon stick, sugar and a cup of milk.  Let it boil, stiring now and then to avoid it from sticking to the saucepan. Afer the milk has disappeared add another cup of milk and the grounded cinnamon. Continue stiring until it thickens, remoove from the fire and add the rest of the milk.
In a glass of cold water soak the gelatine sheets until softened. Meanwhile, blend the content of the saucepan. Add the gelatine and wisk until fluffy and a bit more solid. Pour in four glasses or expresso cups and let it cool in the fridge for 4 hours.
Before serving, sprinkle with ground cinnamon.

When I go to an american restaurant I've always loved asking coleslaw as a side-dish. Initially I thought that the fermentation process that the cabbage had to go through to adquire such texture had to be complicated, but recently I discovered a couple of recipes that revealed that its simplicity was one of its pro's.
Searching through several web pages I observed that, as any all time favourite, it had a million and one variations. Finally I decided that the better option was to mix 2 recipes: Martha's Stewart (who is always a good reference in what concerns to american recipes) and the Delish.com coleslaw. To that you also have to add some personal touches I made in order to give it my special touch.

INGREDIENTS:
1/2 green cabbage
1 big carrot
1/2 cup mayonaise
3 tablespoons of white wine vinegar
1 teaspoon Dijon mustard
1 tablespoon of sugar
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/4 onion (optional)

Just before you start, cut the dark green parts of the cabagge. Shred finely the cabbage and place in a big tupperware. Wash the carrot and grate it coarsely over the cabbage (try not to choose the smallest hole of the grater, but the second smallest). If you are going to put onion into your salad this is the moment to add it.
In a jar mix the mayonaise, pepper, salt, sugar, mustard and vinegar, close the jar and shake until it results a creamy dressing. Pour it over the cabbage and carrot (and onion if you've added some), close the tupperware and shake until it's all covered with the dressing.
After it's made, you have to let it rest, minimum 3 hours, in order to let the cabbage ferment (you'll know because it begins to soften). I recommend you make it the night before so it's perfect for next days lunch. It's perfect as a side-dish or to eat it as any other regular salad.
Enjoy it!! :)

I've just realized that up to now I haven't written any kind of meat recipe and this just couldn't be! By the way, which meat would create less gastronomical conflicts than lamb? Besides, as we are still in summer, and albeit it's not so hot as it was a couple of weeks ago, I've thought of a quick and easy recipe that doesn't need too much time in the kitchen.
The mixture of lamb, honey and herbs can remind us of recipes from northern Africa where joining sweet and salt in meat recipes is quite common. The use of lamb chops, not only will give us one of the tenderest part of the lamb, but also will bring us closer to inland spanish traditional cooking.

INGREDIENTS: (For 4)
12 lamb chops
2 garlic cloves
1 piece of cayenne pepper
7 tablespoons of honey
1 teaspoon of lemon
6 rosemary leaves
Olive oil
Parsley
Salt
Black Pepper

Chop garlic, cayenne pepper, rosemary and parsley and put all the ingredients in a small cup with a tablespoon of olive oil.  Put some salt and pepper over the chops, spread the oil mixture over them and let them settle for a while (more or less 15 minutes)
Once the flavour has gone well into the chops heat a big pan and fry them over a high heat. When golden on both sides, lower the heat and pour the honey and lemon. Turn them around several times until chops are well glazed and the honey becomes golden dark and becomes less liquid. When you observe that the chops are compleatly glazed on both sides remove them form the heat and serve.
You can serve them with almost anything, from lettuce to rice everything will be a perfect side-dish.
