Bizcocho de caramelo y dátiles / Date and toffee cake

INGREDIENTES:
  • 100g de dátiles secos
  • 200ml de agua
  • 2 cucharaditas de bicarbonato
  • 150g azúcar moreno
  • 120g mantequilla (a punto pomada)
  • 1 cucharadita de esencia vainilla líquida
  • 2 huevos
  • 150g harina

I'd been looking forward to making a toffee cake and the other day, due to the oven exploitation policy I've got at my house, I took advantage of the situation and made one. It's a slight modification of the "Sticky toffee cake" published at The English Kitchen  blog and, although it has no glaze over it, it's still a very moist and not excessively sweet cake. And, by the way, it was perfect for using some dried dates I had in my cupboard since Christmas.

INGREDIENTS:
  • 100g dried dates
  • 200ml water
  • 2 teaspoons baking soda
  • 150g brown sugar
  • 120g butter (room temperature)
  • 1 teaspoon of vanilla liquid essence
  • 2 eggs
  • 150g flour
Preheat the oven to 180º C
In a sauce pan put the dates (deboned and cut into 6 pieces) and the water and let it boil until almost all the water has evaporated. Let the saucepan cool.
Whisk the butter with the sugar until creamy. Add the eggs and vanilla and continue whisking until it's all well mixed. Add flour and baking soda, fold and stir in the dates.
Spread some butter in a rectangular tin, pour the batter and bake for 30-35 min, until the tester comes out clean.
Let it settle in the tin for an hour while it cools and it'll be ready to eat :)

¡¡ FELÍZ CUMPLE-BLOG A MI!!

HAPPY BLOG-BIRTHDAY TO ME!!

It's been a year since my friends convinced me to start this blog. I had both excitement and distrust. The excitement was evident, the distrust, for not being able to know how often I was going to be able to update...but it seams it's not passing too much time. (I've compleated a year :) ).
To celebrate it I propose you this candied sour-cherry brownie filled with cream cheese, that's something a bit different to the regular brownie chocolate.

INGREDIENTES:

Para el brownie:
  • 75g mantequilla
  • 200g chocolate cobertura
  • 2 huevos
  • 3 cucharadas de agua
  • 150g de azúcar
  • 100g harina
  • 100g cerezas escarchadas
  • 1 cucharadita de bicarbonato
Para la crema de queso:
  • 200g queso de untar
  • 50g azúcar glass
  • 1/2 cucharadita de esencia de vainilla
  • Nueces (opcionales)
Preheat the oven to 180º
Melt the butter and the chocolate, add sugar and eggs.Whisk thoroughtly until it's fluffy, add flour, water and baking soda. Chop the cherries or whatever fruit you prefer as long as it's a bit sour (save some for the filling), and add them with the chocolate chips and nuts to the batter.
Spread some butter in a rectangular baking pan, pour the batter and bake for 40min.
Let it cool.
Meanwhile whisk the cheese, sugar, vanilla and a tablespoon of milk until you obtain a fluffy mixture.

The other day I was talking to P and suddenly we were talking about my inability to have sopu without getting dirty. Maybe it's due to my unsteady hand (well, almost for sure it's that) or maybe it's just they rebel against me.
As we are still having a changable weather, always staying on the cool and unpleasant side, I've opted
to post an easypeasy recipe that doesn't need many cooking skills nor ingredients. I propose you this recipe for any rainy day that you don't want to go to the supermarket.

INGREDIENTS (Serves 2)
  • 1 big onion or 2 small ones
  • 2 tablespoons of olive oil
  • 1 stock cube
  • 1 tablespoon of Fino
  • 750ml water
  • 4 bread slices
  • Emmental grated cheese
  • Black pepper
  • Salt
Cut the onion in half (longwise) and then in thin julienne. Pour the oil in a saucepan and add the onions and some salt. Cover and let it cook to low heat for 20 min stiring every now and then until the onion is cooked. Uncover, add the Fino and the stock cube. Let the alcohol evaporate and pour in the water. Cover again and let it boil for 15 min to medium heat.
Meanwhile toast the bread slices, put them in bowls and cover them with the grated cheese.
Once the soup has fineshed boiling, pour it over th bread and cheese, add some black pepper and it'll be ready to eat. :)
(Optional) You can place the soup in bowls that you can put into the oven, add more cheese after pouring the soup, and bake it.

Ensalada de algas wakame y pepino/ Wakame seaweed and cucumber salad

This last month the weather doesn't want to let us know if we are heading towards good or bad weather, so you pass from salad to hot soup in a matter of hours.
This is precisely why I propose you this salad. It's not a main course salad, but it's perfect as a side-dish, so you can have it with something hot in cool days or something cool in warmer days.

INGREDIENTS: (serves 2)
  • 10g dried wakame seaweed
  • 1 medium size cucumber
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon rice vinegar
  • 1/2 teaspoon lemon juice
  • Roasted sesame (optional)

Cut the wakame with your hands in small pieces (after re-hydration they will become quite large) and re-hydrate them for 15 minutes.
Meanwhile peel the cucumber and slice it.
In a jar mix the sugar, vinager, soy sauce and lemon juice.
Drain the water from the seaweed and place them in a bowl with the cucumber and season with the mix from the jar.
Let it settle for 10 minues or so before eating to let the flavour enter the ingredients.
Decorate with roasted sesame.

Ensalada o brocheta fresca/ Refreshing skewer or salad

For some time I've been thinking about starting a section based on what different artistic objects inspired me ... and it was just what the next "blog to blog" proposed.
It was María, from María Ideas Flotantes, who got me to start it. She
proposes making art with stories, and that was precisely what led me to make her a recipe to this painting. Likewise, if you go to her blog, you'll find interesting and different stuff at the same time as you are introduced to alternative options to a common idea. That's what I've made here, two different ways of presenting the same salad inspired in Basquiat's Aopkhes (for a better quality painting reproduction go to Maria's post)

"When Rita arrived with her proposal, I thought... mmmm... Colour. Something casual, that breaked moulds, free.  That the recipe didn't end up being locked up in an image, that abled to  investigate with flavour, textures. An artist that wouldn't mind if someone experimented with his work, changing it's format... eating it!!!! Basquiat, the low-class graffiti artist that was praised by New York art system" María Ideas Flotantes

It was a refreshing art work, with a splash of sourness that you couldn't appreciate at first glance, so the ingredients couldn't be what the first impluse drove us to. The black, it cound perfectly have been chocolate, but it was just too normal and sweet to go with this image, so I finaly ended up with the following list of ingredients and a more than satisfying result :)

INGREDIENTS:
  • 250g cherry tomatoes
  • 1 orange
  • Farmer's cheese
  • 60g black olives (I used "negras de Aragón", but it will be ok any Kalamata type"
  • Extra virgin olive oil
  • Sherry vinegar
  • Salt
Rinse the tomatoes and cut them in halves (it it's for salad). With a sharp knife peel the orange (try not to leave any white parts) and cut it following the segments and then in half. Cut the cheese in 2cm thick cubes and debone the olives. In a small cup mix 4 parts of olive oil and one of vinegar (rather thant the regular 3 to 1) and salt.
If you are making skewers insert tomato-olive-orange-cheese, or as you prefer, but make sure that the olive's strong flavour is next to the tomato. Pour the dressing over it and let it drip to the rest of the skewer.
Instead, if you are making a salad, put everything in a plate or platter, pour the dressing over it andmix carefully as you don't want the cheese to break into pieces.

¡Disfrutadlo! :)

Whoever pays atention to my work lunch packs in winter will see that I'm a soup and purée lover. Not only they are easy to carry (in a small jar you can fit the perfect quantitie) but also you can make a lot and freeze it.
However, no matter if it's purée or soup, I love finding chunks that alter the usual texture. In this case some easy croutons hel, not only changing the texture but adding to it their own flavour.
And, it's been the perfect oportunity for using for the first time this bowl, that was one of my birthday presents. :)

INGREDIENTS: (serves 4)
  • 8 medium size carrots
  • 1 big leek
  • 1 medium size potato
  • 2 tablespoons olive oil
  • 4 slices of stale bread
  • 1 teaspoon curry
  • 1/2 teaspoon of chili pepper flakes (optional)
  • 1 tablespoon of butter
  • 2 stock cubes
  • Water

Rinse the leek and cut it in slices. In a pressure cooker (or a regular pot) pour the oil and star to cook the leek. Meanwhile, rinse and peel the carrots and cut them in slices of around 1cm. Add them to the leek. Peel the potato and cut it in big chunks. Once the carrots and the leek start to get a golden color add the potato and let it cook for 2 min or so. Pour water and stop just before covering compleatly the carrots. Add the stock cubes, stir and let it cook. If it's in a pressure cooker it will take about 10 min (if it's quick it will take less) and in a pot you'll have to cook it for around 20 min.
While the soup is cooking, cut the bread in cubes of 1cm x 1cm aprox. Put the butter in a pan and, when it's hot, add the bread and toast them. Once they are golden, turn the heat off, add the curry, stir until it's evenly distributed and let them cool.
Blend the content of the pressure cooker or pot.
Serve in a bowl or deep plate, top with croutons and sprinkle with chilly pepper flakes.
Enjoy! :)
