When one goes on Eramus (and it has already passed some time since I went on mine) intends to, apart from having a good time, meet other cultures and people from different countries. In my case I also took advantage of it and came back home having learned recipes from other countries rather than the one I had been living in. The fact that spanish and italians were all over the place lead me to nourish the first ones and learn new recipes from the second ones. I also learned several vietnamese recipes, I will post that another day.
Albeit asuming it's true what is normally say about the italians and the vast quantities of pasta they consume, I also succeeded in learning how to make pizza, rissottos and some other typical dishes :)
In this case I propose you a mushroom risotto that, other than being delicious, it's great if you have guests. The mushroom choice it's up to you, as dried boletus (also known as Funghi porcini) are not very cheap, but give a lot of flavour to the dish. It will depend on how generous you feel the quantities that you choose from each of them, but I recommend you use at least 5g of boletus per person.

INGREDIENTS:
  • 1 garlic clove
  • 1/2 onion chopped
  • 40g dried boletus edulis
  • 2 mushrooms sliced
  • 2 cups of rice
  • 5 cups of water ( you can also substitute it with vegtable stock and eliminate the stock cube)
  • 1 stock cube
  • 3 tablespoons of olive oil
  • Salt
  • Pepper

In a bowl put a cup of hot water  and the dried boletus, in order to hydrate them. I recommend you put something that holds the boletus inside the water because they tend to float.
While you are waiting put the rest of the water and the stock cube in a saucepan or the stock, and make it boil.
As you are wainting for it to boil chop the onion in small pieces and crush the garlic with the side of the knife (it will give it's flavour but it will be easy to remove)
In a big and non-stick pan put the olive oil and fry the onion and garlic. Once they are golden add the fresh mushrooms and once they seem they are starting to be cooked add the rice. Stir the rice for a minute until it has absorved the oil and add a couple os ladles of stock. Continue stiring to aloud the rice to release the starch. Set it to medium heat and let the rice cook without letting all of the liquid evaporate too quickly. Add the boletus and, bewaring no residues fall into the rice, use part of the hydrating water on the rice. Once the liquid disappears add another ladle of stock (and so on until it's almost cooked). Once we try the rice and it's almost cooked we pour in the last ladle of stock, we stir it and we turn of the heat and let it settle (covered) for about 5 minutes. If you find you have spare stock in your saucepan don't worry, but better safe than sorry.
You cal always skip the waiting time if you see your rice is already cooked as if not it will overcook.
Enjoy it while it's still hot :)

For the last few days I haven't stop eating for just one second. It's not that I complain, it's just that I need to eat lighter things for a couple of days. Today I have dinner again at another friends house and this time I am the one that's taking the dessert. As I am full I thought of one that could be quite light and what better than a tarte tatin? It manages to fulfill that sweet tooth we've got after eating and at the same time contains a quite a lot of fruit. And it's SO EASY to make!! :)
If anyone is wondering where the name comes from it's the name of the hotel in France where it was created, or so says Wikipedia, by accident.

INGREDIENTS:
  • 6 tablespoons of caster sugar
  • 1 tablespoon of butter
  • 250g puff pastry dough
  • 1.5kg apples

Peal the apples, take out the seeds and cut them in half or quaters.
In an oven tin that hasn't a removable bottom (so that the caramel doesn't have anyway to scape) and that you can put on the fire and in the oven, place the sugar and put it on the fire until it starts to form a
caramel with toffee colour. Add butter before it becomes darker and remove from the fire. Stir so that the butter blends in well.
Preheat the oven to 180º.
Meanwhile start to place the apples over the caramel. Take into consideration that as you will turn the cake, you have to make so that when you place it in the right position the apples look nicely arranged. As you'll have spare holes, cut the remaining apples into small pieces to fill in the gaps. Once it's all well arranged, cover with the puff pastry dough pressing the borders towards the bottom part of the tin.
Bake on the centre part of the oven to 180º until the pastry is well cooked (golden brown).
Wait a bit before turning it upside- down as you could burn with the caramel.
It's gorgeuos both hot and cold so you can eat it as you wish :). Whatever way you choose, you can eather eat it plain or side it with icecream or whipped cream.

¡Bon appetit!

I had today one of those dinners where everybody makes a different recipe and you end up eating way too much. I initially intended to make a dessert, but as I was told by the organizer that several people woul make a dessert I finally decided to make a quiche, as it's easy to eat without cutlery.
Leeks contribute giving juiciness to quiches and, in this particular case, albeit the goat cheese gives most of the flavour it's a great match with the leeks.

INGREDIENTS
  • 1 roll of refigerated pie crust
  • 200 ml cream
  • 50 ml milk
  • 3 eggs
  • 3 medium size leeks
  • 180g goat cheese log
  • 100g de grated cheese
  • Pepper
  • Salt
  • Olive oil
Preheat the oven to 180º.
Clean the leeks, cut them in half longwise and cut them in thin slices. In a pan put a couple of spoons of olive oil, the leeks, salt and cook them to medium heat until they are soft.
Grease an oven tin with oil (it has to be at least 4cm high) and place over it the pie crust. Use a folk to make mall holes to its surface to avoid it from making bubbles. When you see it starts to take a slight golden colour take it out of the oven. Place the cooked leeks over the crust, cut the cheese in slices of about 1cm thick, and put them over the leeks.
In a bowl beat the eggs, cream, milk and grated cheese. Pour this mixture over the goat cheese and put the quiche into the oven. Bake to 180º for around 20 minutes (or once you see al the surface is golden and if you put a knife into it it comes out clean). Take it out of the oven and be careful removing it from its mould so that the crust doesn't break.
Bon appetit!

¡Disfrutadla! :)

One of those things that gets into your head that makes you wonder if you could be pregnant just because you can't stop thinking about it all day long and that, after a long woking day, you get home and start to bake. Just one thing, when I finally decided myself to make it I had no carrots at home and in this recipe it's just about carrots. The thing is I managed to get someone to buy them for me and around 20.30, before cooking dinner, I got to it.
In these cases, as what it concerns classical american recipes, I follow Martha Stewart's blog. Just one thing, I've reduced the butter quantities of her recipe and added some more carrot to it, and the result was delicious.  You'll obtain a creamy and flavourful cake, perfect for any time of the day.
Another thing, it makes a lot of batter, so if you prefere not making a multilayer cake as Martha proposes, I recommend you fill a round tin and a plumcake tin or reduce the recipe to 2/3.

INGREDIENTS:
  • 2 1/2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 3/4 teaspoon of salt
  • 1/2 teaspoon of grounded ginger
  • 1/4 teaspoon of grounded nutmeg
  • 2 teaspoons of vanilla extract
  • 250g soft butter
  • 3/4 cup of brown sugar
  • 3/4 cup of white sugar
  • 3 large eggs
  • 1/2 cup water
  • 3 1/4 grated carrots (about 4 big or 6 small carrots)
  • 10 chopped walnuts and 6 for decoration
  • Raisins (optional)
For frosting:
  • 250g soft cheese
  • 6 tablespoons of powdered sugar
  • 1 teaspoon of vanilla extract
  •
Preheat oven to 180ºC.
In a bowl mix all the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger).
In another bowl wisk with the electric mixer, the butter with the flours until you obtain a fluffy mixture. Add eggs, beating well after each one. Add the vanilla extract, carrots and water and beat for 2 minutes to medium speed until everything is well blended.  Join in the flour mixture, beat and add the walnuts and raisins (if you've decided to add some).
Butter the cake tin (round one of about 25cm diameter) and pour the mix in it. If you are making all the batter and you don't want it to be too thick you can put 2/3 of the batter in a round tin and 1/3 in a plumcake tin.
Bake the cake for 50 to 60 minutes (the plum cake tin will need around 45 to 50 min) checking that the center is well cooked when your toothpick comes out clean.
Let the cakes cool in a rack  before frosting.
In a bowl mix the cheese (room tempereature) with the powdered sugar and the vanilla and beat with the electric mixer until you obtain a fluffy mix. If it's too dense, (sometimes happens depending on the cheese brand) you can add one or two tablespoons of milk. Spread the frosting over the cake once is cooled (you can make twice as much of frosting in order to put a layer of frosting in the middle of your cakes) and decorate with the walnuts (chopped, whole or both, as you prefere)
Enjoy! :)

Halloween has arrived and after some very busy days I haven't had time to make what I initially intended to cook. Anyway, I provide you a last minute, easy peasy and funny recipe. (Maby the most complicated part is sticking all together)

INGREDIENTS (For 8 bats)
150g dark chocolate
6 Digestive cookies
4 walnuts
Powder cocoa
White chocolate (for final decoration)

In a cup, melt 50g of chocolate and over tin foil or a sil-pat make the wings. Make sure you don't make them to thin as they will break and not too bin (as I did) or you'll have problems getting them to stay in their place. Once they start to solidify, with a toothpick, draw over the chocolate the articulations. Let them cool.
Peel and chop the walnuts. Ground finely the coockies. Mmelt the spare chocolate (100g) and mix with the crumbs and walnuts. Let it solidify a bit before makin the shapes. Make half spheres, stick the wings and the skewer and stick over it the other half. Make sure the final result is as if it was one single ball or the wings might fall.
Melt a tiny bith of white chocolate and make with it the eyes and fangs.
Let it cool for about 1h.
Enjoy both the bats an Haloween!! :)

In order to continue, and try to finish, with the pie and turnuver dough fever that seems to have captured the last posts, and making use os the recycling section, I've decided to give you some ideas  on how to make deliciuos desserts using turnover dough.
The best thing about this recipe it's how easy it's to make it. I DON'T specify exact quantities in the ingredients as in the description I tell you how to make individual servings. You just have to repeat it for as long as you want.

INGREDIENTS
  • Turnovers dough circles (I like La Cocinera brand)
  • Apple compote
  • Cream cheese
  • Raisins
  • Cinnamon
  • Butter
Pick a dough circle and, in the middle of it put a teaspoon of cream cheese, a teaspoon of cold apple compote, 3 or 4 raisins and a pinch of cinnamon.
Closing the flowers might be the most complicated step in this recipe. Join equidistant points from the perimeter in the middle (so that you obtain a triangular base) with your fingers and, without letting them go, fold each side of the small bag you've made to a side (all sides mut be folded to the same side in order to make them look as the picture)
Preheat oven to 200º.
Melt some butter and with a brush put some of it in the base of your oven tin before placing your flowers. Brush your flowers with some butter and put them in the oven until they are golden (it takes from 6 to 8 minutes)
Try to resist the temptation of eating them as they come out of the oven because, as I told you with the blackpudding and apple turnovers, apple keeps heat for a long time and you can burn your mouth. Let them cool for 5 minutes or so before eating them.
Before serving you can sprinkle them with some cinnamon.

Ok, it might seem that recently I spend my days thinking about which type of filling I'm going to make so that afterwards I can put it in the oven. Nothing even close to that. It's all been a delightful coincidence.
This summer I discovered in Galicia  (one of Spain`s northern regions), or at least at the Mariña Lucense (the coast line belonging to Lugo) that the empanadas (pies) made out of puff pastry were called "pastelón". After having some really good octopus filled ones I wanted to try by myself making one filled with mussels in escabeche, so here it is!
It's juicy, flavourful, light, you can make it in about an hour and it serves 8 good eaters.

INGREDIENTS:
  • 1 red pepper
  • 2 - 4 mushrooms
  • 1 big onion
  • 1 carrot
  • 2 tins of small mussels in escabeche (240g)
  • 2 tablespoons of tomato sauce
  • 450-500g puff pastry
  • Olive oil
  • Flour (to spread out the puff pastry)
  • 1 tablespoon of milk (to give a shiny look to your puff pastry)
If you're using frozen puff pastry dough, take it out of the fridge, opn the package, place it over a clean surface and cover it with a kitchen cloth while it defreezes. If it's fresh, you can skip this step :). The weight of your dough will vary depending on the brand you buy but basicaly what we look for is 2 sheets of dough that, once stretched cover the whole oven pan.
Chop the onion and the red pepper in pieces of around 1cm. Put 3 spoons of olive oil in a pan and heat. Meanwhile chop the carrots in very small pieces and add it to the hot pan. Stir and add the pepper and onion, cover it, and while it let it turns soft, clean and chop the mushrooms. Add the cans of mussels (with all the liquid) and the mushrooms to the pan, stir and add the tomato sauce.  Let it boil to a low heat until all the liquid has nearly disappeared and once youve obtained this, set it aside and let it cool.
Preheat the oven to 180º
Once your puff pastry is compleatly unfrozen (in case it was frozen before), sprinkle some flour over a dry and smooth table and spread the dough with a rollingpin (it must result a third bigger than the original one on each side). If you are using fresh puff pastry dough be sure you don't role it too much as it's usually less thick than the frozen one. As I've already told you the intention is to obtain 2 layers of dough that cover the surface of the oven tray.
Once ready, sprinkle some flour over the oven tray, place one os the  puff pastry sheets, top with the filling (leave about 2 fingers without filling so you can close the pie) and place the othe sheet on top. Roll the sides towards the middle a couple of times, pushing down with your finger every centimeter to make sure that it's well closed and the filling wouldn't come out when you bake it. As the corners will have a lot of spare dough, cut it and use it to make the decorations on top of your pie.
Paint the surface with milk (or egg if you prefer so) and put it into the oven. Place it in the lower part of the oven, but not in the lowest one. Bake for about 15-20 minutes until the surface is golden. Take it out of the oven and let it cool a bit before burning your toung.
